When I prepared dishes for Apogée Bar , I like to brown the tandoori mixture over high heat to bring out the aromas, then I add oil and chopped onions , before adding a piece of juicy chicken or a fillet fish accompanied by crunchy vegetables . It is a simple , effective and absolutely tasty method and a very traditional method. Add a little black pepper and that’s it.
