Here is the exact recipe I share in my workshops and videos. You can use fresh Gourmet pods or re-use spent pods (after making pastry cream, for instance).
Ingredients for 400 ml of extract
- Option A (Classic): 100 g Madagascar Bourbon vanilla pods + 300 ml neutral vodka.
- Option B (Alcohol-free maceration): 100 g vanilla pods + 300 ml purified water + 100 g brown sugar.
- Option C (Concentrated): 50 g whole Gourmet pods + 300 ml water + 100 g cane sugar.
Preparation Steps
- Cutting: Split pods lengthways, scrape caviar seeds, then slice pods into 2 cm chips maximum. Check out our detailed technical guide.
- Saucepan setup: Place cut vanilla and caviar into a saucepan, then pour chosen solvent (alcohol or water/sugar).
- Controlled heating: Bring mixture to a gentle temperature of 65 °C (149 °F). Simmer and steep on very low heat for 5 hours, stirring regularly.
- Pressing: Allow to cool slightly, then squeeze vanilla firmly through cheesecloth to extract remaining aromatic resins.
- Bottling: If using water/sugar base, add 10% of total volume in strong alcohol before pouring into glass bottle. Bottle directly if using vodka base.
Why your homemade extract is sometimes weak
