Known as Arnaud Vanille since 2014. Exotic fruit and tea mocktails are among the recipes I crafted alongside my son for our free summer drink book.

The Essentials: The Art of Vanilla & Tea Mocktails

  • Why Tahitensis Vanilla? Its floral, aniseed, and musky notes pair naturally with passion fruit's tropical acidity without needing heat.
  • The Role of Tea: Natural tannins provide depth, body, and structure often missing in alcohol-free drinks.
  • A Holiday Gift: Amid rising fuel costs and inflation, Le Comptoir de Toamasina is the first online spice shop to gift a complete 50-recipe book.
  • Family Crafted: Created and approved together with my son.

Choosing the Right Vanilla: Tahitensis vs Planifolia

In an iced fruit mocktail (especially with passion fruit, mango, or pineapple), selecting the right vanilla species makes all the difference:

1. Tahitensis Vanilla (Tahiti or PNG) — The Fruit Specialist: Rich in floral, anise, and musky aroma molecules, its volatile essential oils bloom in cold liquids, beautifully prolonging passion fruit freshness.

2. Planifolia Vanilla (Madagascar or PNG) — The Creamy Classic: Rich in pure vanillin with cocoa and caramel undertones, best reserved for iced coffee, chocolate drinks, or toasted yerba maté.

A Gift for Your Summer Holidays

We know economic challenges and rising travel costs put pressure on holiday budgets. That is why I wanted to give back: Le Comptoir de Toamasina is the very first online gourmet spice shop to gift a complete 50-recipe book 100% free.

I crafted this book at home with my son—he tested sweetness levels and tasted every single drink with me!

  • Fresh pulp of 1 passion fruit
  • 2 cl homemade Tahitensis vanilla syrup (or 1/2 scraped Tahitensis pod)
  • 1 cl fresh lime juice
  • Sparkling water and crushed ice

Step-by-Step Directions

  1. In a tall cocktail glass, add fresh passion fruit pulp and Tahitensis vanilla syrup.
  2. Fill the glass two-thirds full with crushed ice.
  3. Pour in the cold-brew black tea and fresh lime juice.
  4. Gently stir with a cocktail spoon to distribute vanilla specks and passion fruit seeds.
  5. Top with a splash of sparkling water for effervescence and garnish with half a passion fruit.
Adult Version ("For Grown-ups"): As noted in our book, to turn this mocktail into an adult cocktail, simply stir 4 cl of vodka or white rum directly into your individual glass.
