Our view on this tea

This tea was imagined from Brazil, in Minas Gerais. Mango and passion fruit — the maracujá — are not abstract aromas for us: it's the taste of everyday life. We squeeze the maracujá in the morning into juice, make mousses and caipirinhas with it. It is a tart, deep fruit, with an elegant bitterness in the seeds, which we wanted to find in the cup.

Our company is Franco-Brazilian: we export açaí, acerola and guarana from Brazil, while working between the plantations and the markets. This Sun of Brazil is kind of the bridge between these two worlds — a beautiful base of black tea dressed with the fruits that rock Brazilian daily life. It is the perfect tea to give a taste of Brazil to someone who has never been there.

Passion fruit and mango, two emblems of Brazil

Brazil is one of the world's largest producers of passion fruit (Passiflora edulis, the maracujá). The plant, a climbing vine native to South America, produces a spectacular flower — the "passion flower" — so named by 16th century Jesuit missionaries who saw in its structure the symbols of the Passion of Christ. In Brazil, maracujá is everywhere: juices, mousses, desserts, cocktails.

Mango (Mangifera indica), although originally from South Asia, has perfectly acclimatized to the Brazilian Northeast, notably in the São Francisco Valley, which has become a major export region. Its golden, sweet and fragrant flesh is one of the emblematic fruits of the tropical summer. How to prepare the Sun of Brazil Black Tea

  1. Measure: about 2 grams of tea for each 250 ml of water.
  2. Heat the water: to 85-90°C, to release the aroma of the passion fruit and the depth of the black tea without burning it.
  3. Steep: 3 to 4 minutes (up to 5 for a more pronounced flavor).
  4. Enjoy: filter and let yourself be carried away. Serve iced with a slice of lemon for a real tropical summer drink.

The "homemade" recipe (for 100g)

  • Quality Black Tea (Assam or Ceylon type): 70g
  • Dried mango in small cubes: 10g
  • Dried passion fruit: 10g
  • Dried marigold flowers: 5g
  • Natural flavor or essential oils of mango and passion fruit: 1g

Gently mix the dry ingredients, add the natural flavor and stir well. Store in an airtight glass jar away from light.

Ingredients

  • 50 ml Brazilian cachaça
  • 20 ml cane sugar syrup
  • 2 tbsp very strong brewed and cooled black tea
  • ½ lime cut into cubes
  • Crushed ice

Preparation

  1. In a short, wide glass, vigorously crush the lime cubes with the cane syrup using a muddler.
  2. Add crushed ice to the top of the glass.
  3. Pour the cachaça and the Sun of Brazil black tea. Mix well from bottom to top and enjoy!
2. The Exotic "Mojitea" (alcohol-free)

Ingredients

  • 150 ml brewed and very cold Sun of Brazil black tea
  • 20 ml lime juice
  • A dozen fresh mint leaves
  • 1 tbsp brown sugar
  • Sparkling water and ice cubes

Preparation

  1. At the bottom of a large glass, rub the mint with the sugar and lime juice.
  2. Fill the glass with ice cubes.
  3. Pour in the fruity iced tea, then top up with a dash of sparkling water. Garnish with a mint leaf.
3. Sun of Brazil Punch (to share)

Ingredients

  • 50 cl brewed and cooled Sun black tea
  • 25 cl amber or aged rum
  • 25 cl freshly squeezed orange juice
  • 5 cl grenadine syrup
  • Fresh mango slices and citrus fruits, ice cubes

Preparation

  1. In a large punch bowl, mix the tea, rum and orange juice.
  2. Pour the grenadine to color the bottom.
  3. Add the fresh fruit slices so they soak up the mixture. Serve with a ladle over ice.
4. Mango-Passion Fruit Infused Rum (Rhum Arrangé)

Ingredients

  • 700 ml white agricultural rum
  • 3 tbsp Sun of Brazil tea
  • 1 peeled fresh mango cut into strips
  • The fresh pulp of 2 passion fruits
  • 100g cane syrup

Preparation

  1. Place the mango, passion fruit pulp, tea and sugar in a large airtight glass jar.
  2. Pour the rum over it. Close tightly.
  3. Let macerate for 4 to 6 weeks away from light, gently stirring the jar once a week. Filter finely before tasting.
5. "Rising Sun" Mocktail

Ingredients

  • 15 cl brewed and cooled black tea
  • 5 cl orange or mango juice
  • 3 cl cranberry juice
  • 1 cl raspberry or strawberry syrup
  • Ice cubes

Preparation

  1. In a shaker, place ice cubes, tea, juices and syrup.
  2. Shake vigorously for 10 seconds.
