It is Pemba Island that provides the bulk of the quality production from the Zanzibar archipelago: the vines climb along living stakes in the heart of real "spice forests," in the shade of clove trees, cinnamon trees, and nutmeg trees. On the mainland, the Kilindi district (Tanga region) and the Morogoro mountains offer loamy soils rich in organic matter, where farmers like the Bakari brothers practice contour farming to combat erosion.

Tanzanian producers wait for near-maturity of the berries (green-yellow-orange) before harvesting, a choice that reduces yield but maximizes the concentration of piperine and essential oils. The harvest is 100% manual, grain by grain.
