How to prepare the Adventurers' Black Tea

  1. Measure: about 2 grams of tea for each 250 ml of water.
  2. Heat the water: to 85-90°C, ideal to extract the richness of the spices and guarana without burning the black tea.
  3. Steep: 3 to 4 minutes (up to 5 for a more pronounced and spicy flavor).
  4. Enjoy: strain and dive into the adventure. Indian style: steep for 2 to 3 minutes and add 1/3 hot milk, like a Chai!

  • Full-bodied Black Tea from India (Kerala or Assam): 70g
  • Madagascar Vanilla in pieces: 5g
  • Crushed cinnamon: 8g
  • Pink berries: 5g
  • Black peppercorns: 2g
  • Guarana powder from Brazil: 5g
  • Spice mix (cardamom, nutmeg): 5g

Gently mix all the dry ingredients so that the guarana coats the tea leaves well. Store in an airtight glass container away from light.

5 Bold Recipes: Cocktails & Chai

1. The Adventurers' Chai Latte (Spiced milk tea)

Ingredients

  • 15 cl filtered water and 15 cl milk (cow or oat drink)
  • 2 heaping tsp of Adventurers' Black Tea
  • 1 tsp honey or agave syrup

Preparation

  1. In a small saucepan, bring the water and milk to a simmer.
  2. Turn off the heat, add the spiced tea, cover and let steep for 5 to 7 minutes (the milk softens the bitterness, allowing for a longer infusion).
  3. Strain directly into a large mug. Add the honey, stir, and sprinkle with a pinch of cinnamon.
2. "Guarana Expedition" Infused Rum

Ingredients

  • 700 ml white agricultural rum
  • 2 heaping tbsp of Adventurers' Black Tea
  • 1 vanilla bean split in half
  • 2 whole cinnamon sticks
  • 3 pink berries and 1 tbsp cane sugar

Preparation

  1. Place the tea, sugar and spices in an airtight glass jar.
  2. Pour the rum over it. Close tightly.
  3. Let macerate for 4 to 6 weeks at room temperature, away from light, shaking gently once a week. Strain carefully before tasting.
3. Explorers' Black Tea Punch (to share)

Ingredients

  • 1 liter of steeped (strong) and cooled adventurers' black tea
  • 250 ml fresh orange juice
  • 250 ml pineapple juice
  • 100 ml cane sugar syrup
  • Fresh cut fruit (oranges, apples) and ice cubes

Preparation

  1. In a large bowl, mix the cold tea with the fruit juices and the cane syrup.
  2. Add the fresh fruit pieces so they absorb the tea spices.
  3. Just before serving, add a large amount of ice cubes. (Can be spiked with amber rum if desired).
4. "Tropical Adventure" Cocktail (with alcohol)

Ingredients

  • 60 ml Infused rum with Adventurers' tea (see recipe #2) or classic amber rum
  • 30 ml fresh lime juice
  • 15 ml cane sugar syrup
  • Sparkling water and ice cubes

Preparation

  1. In a shaker, place the rum, lime juice and syrup with ice cubes.
  2. Shake vigorously.
  3. Strain into a glass containing fresh ice. Top up with sparkling water and decorate with a slice of lime.
5. "Energy & Spices" Syrup for Desserts

Ingredients

  • 25 cl water
  • 200g brown sugar
  • 3 tbsp Adventurers' Black Tea

Preparation

  1. Boil the water and brown sugar in a saucepan until the sugar is completely dissolved (syrup consistency).
  2. Turn off the heat, add the tea and cover the saucepan. Let steep until completely cool.
  3. Pass through a fine sieve to remove all spices and leaves. This spicy guarana syrup is incredible for topping pancakes or sweetening yogurt!

Originating from the Brazilian Amazon basin, guarana brings a characteristic note, slightly earthy and woody. Above all, it is a plant naturally rich in guaranine (a molecule identical to caffeine), which reinforces the tonic aspect of black tea.
What is the difference with a classic chai tea?
It is a bold interpretation of chai. It uses the base of an Indian spiced black tea (cinnamon, pepper, cardamom) but adds Madagascar vanilla for sweetness, and Brazilian guarana for character.
At what temperature should I steep it?
The ideal is between 85 and 90°C. If you steep it too hot or too long (more than 5 minutes in water), the Assam tea will develop a lot of astringency.
