During my trip to Madagascar in 2013, I went to see cinnamon production. And out of curiosity I did the same thing in Brazil and discovered similar working methods.

The origin of our raw material is anchored in our agricultural cooperatives in Fénerive and Manakara, located on the east coast of the island.

Our teams in the field train producers in our partner sectors, equipping them with the skills necessary to exploit cinnamon trees sustainably. For example, they acquire a cutting method aimed at preserving trees while encouraging the multiplication of young shoots.

We collaborate with certified organic and Fair for Life farmer sectors, underlining our commitment to responsible practices.

The cinnamon tree, which can reach a height of 15 to 20 meters, is kept at a height of 2 meters by the farmers in order to facilitate its exploitation.

Collection of Cinnamon Bark

Cinnamon is harvested by scraping the bark of cinnamon trees after being harvested on the vine. Once harvested, the cinnamon bark is dried and rolled up on itself to form sticks. To get more perfect cinnamon pipes, they can be ironed by hand. Once dried, the cinnamon, the raw material is transported to our factory. Upon arrival, each batch of cinnamon undergoes rigorous control. The cinnamon is then carefully dried and sorted, then, depending on the product range, it is cut, crushed or pulverized with the greatest care to preserve its essential oil content.

1. Cinnamon Apple Pie

Ingredients:

  • 1 shortcrust pastry
  • 6 apples
  • 1/2 cup sugar
  • 1 tablespoon of cinnamon powder
  • 2 tablespoons of butter

Preparation :

  1. Preheat the oven to 200°C.
  2. Spread the shortcrust pastry in a tart mold and prick the bottom with a fork.
  3. Peel, core and cut the apples into thin slices.
  4. In a bowl, mix the sugar and cinnamon.
  5. Arrange the apple slices on the tart base.
  6. Sprinkle the cinnamon and sugar mixture over the apples.
  7. Cut the butter into small pieces and distribute it over the apples.
  8. Bake the tart for 45 minutes, or until the crust is golden and the apples are tender.

2. Gingerbread

Ingredients:

  • 200 g of honey
  • 100g brown sugar
  • 250g of flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of cinnamon powder
  • 1/2 teaspoon powdered ginger
  • 1/2 teaspoon ground nutmeg
  • 1 egg
  • 25 cl of milk

Preparation :

  1. Preheat the oven to 160°C.
  2. Heat the honey and brown sugar over low heat until the sugar dissolves.
  3. In a salad bowl, mix the flour, baking soda, cinnamon, ginger and nutmeg.
  4. Add the honey and brown sugar mixture and mix well.
  5. Add the egg and milk, mix until smooth.
  6. Pour the batter into a buttered cake pan.
  7. Bake the gingerbread for 50 minutes, or until a knife inserted in the center comes out clean.

3. Chai Latte

Ingredients:

  • 2 bags of black tea or 5g of loose tea
  • 2 cups of water 500ml
  • 2 cups of milk
  • 1 cinnamon stick or 1 teaspoon cassia cinnamon powder
  • 1/2 teaspoon powdered ginger
  • 1/2 teaspoon cardamom powder
  • 2 tablespoons of honey

Instructions:

  1. In a casserole dish, boil the water with the cinnamon stick.
  2. Add the tea bags and let steep for 5 minutes.
  3. Remove the tea bags and add the milk, ginger, cardamom and honey.
  4. Heat the mixture over medium heat until hot.
  5. Remove the pot from the heat, filter the mixture through a fine sieve to remove the cinnamon stick and ginger pieces.
  6. Serve the chai latte hot.

4. Cinnamon Carrot Cake

Ingredients:

  • 2 cups of flour
  • 2 teaspoons of baking soda
  • 2 teaspoons of cinnamon powder
  • 1/2 teaspoon of salt
  • 1 cup of sugar
  • 3/4 cup vegetable oil
  • 3 eggs
  • 1 teaspoon of vanilla extract
  • 2 cups grated carrots

Preparation :

  1. Preheat the oven to 180°C.
  2. Mix the flour, baking soda, cinnamon and salt in a salad bowl.
  3. Whisk the sugar and vegetable oil until creamy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Add the vanilla extract and mix.
  6. Add the flour mixture in two batches, mixing well after each addition.
  7. Add the grated carrots and mix.
  8. Pour the batter into a buttered and floured cake pan.
  9. Bake the cake for 40-45 minutes, or until a knife inserted in the center comes out clean.

5. Cinnamon Bun

Ingredients:

  • 500 g of flour
  • 1 sachet of baker's yeast
  • 80 g of sugar
  • 3 eggs
  • 125 g soft butter
  • 20 cl of milk
  • 1 tablespoon of cinnamon powder
  • 1 pinch of salt

Preparation :

  1. Mix the flour, yeast, sugar and salt in a salad bowl.
  2. Add the eggs and milk, mix until you obtain a homogeneous dough.
  3. Add the soft butter, knead the dough for 10 minutes until smooth and elastic.
  4. Let the dough sit in a warm, dry place for 1 hour, until doubled in volume.
  5. On a floured work surface, roll out the dough into a rectangle about 1 cm thick.
  6. Sprinkle the cinnamon all over the surface of the dough.
  7. Roll the dough into a tight roll and cut it into slices about 2cm thick.
  8. Arrange the slices in a buttered cake mold.
  9. Let the dough rest again for 30 minutes, until it has doubled in volume.
  10. Preheat the oven to 180°C.
  11. Brush the brioche with a little milk.
  12. Bake the brioche for 25 minutes, or until golden and well puffed.
