Cinnamon is a precious spice which is extracted from the bark of the cinnamon tree. True cinnamon comes from the inner part of the bark of the stems of Cinnamomum verum. This area is where the essential oil resides, giving the spice its distinct scent. On the other hand, the outer part of the bark has an acidic taste which detracts from the delicate flavor of the internal cinnamon.

For a long time, there has been confusion in the world of delicatessen and trade between different sources of cinnamon all commonly called "cinnamon" in French. In English, two terms  exist: “cinnamon” and “cassia” . These products come from the bark of plants of the Cinnamomum genus. Only C. verum provides true cinnamon or Ceylon cinnamon, while the others produce secondary varieties called "cassia" by the English.

However, not all of these varieties are available on the European market. For example, cinnamon from C. cassia (Chinese cinnamon) is mainly marketed in the United States and Southeast Asia. Similarly, cinnamon from C. loureirii (Cochinchina cinnamon) is rare outside Vietnam due to its inferior quality.

The best quality cinnamon comes from Cinnamomum verum, a tree widely distributed in Madagascar, Sri Lanka and Brazil.

During my trip to Madagascar in 2013, I went to see cinnamon production. And out of curiosity I did the same thing in Brazil and discovered similar working methods.

The two cinnamon producing regions in Madagascar

The origin of our raw material is anchored in our agricultural cooperatives in Fénerive and Manakara, located on the east coast of the island.

Our teams in the field train producers in our partner sectors, equipping them with the skills necessary to exploit cinnamon trees sustainably. For example, they acquire a cutting method aimed at preserving trees while encouraging the multiplication of young shoots.

We collaborate with certified organic and Fair for Life farmer sectors, underlining our commitment to responsible practices.

Cinnamon tree in Madagascar

The cinnamon tree, which can reach a height of 15 to 20 meters, is kept at a height of 2 meters by the farmers in order to facilitate its exploitation.

Collection of Cinnamon Bark

Cinnamon is harvested by scraping the bark of cinnamon trees after being harvested on the vine. Once harvested, the cinnamon bark is dried and rolled up on itself to form sticks. To get more perfect cinnamon pipes, they can be ironed by hand. Once dried, the cinnamon, the raw material is transported to our factory. Upon arrival, each batch of cinnamon undergoes rigorous control. The cinnamon is then carefully dried and sorted, then, depending on the product range, it is cut, crushed or pulverized with the greatest care to preserve its essential oil content.

FAQs about Cinnamon and Cinnamon Powder

1. What is the difference between Ceylon cinnamon and Cassia cinnamon?

The main difference lies in the origin of the cinnamon trees. Ceylon cinnamon comes from the cinnamon tree "Cinnamomum verum" and is considered the "true" cinnamon. Vraie is the translation of Cinnamon Verum from Latin to French. In France the true word for cinnamon is prohibited by law. Cassia cinnamon comes from different species, including "Cinnamomum cassia". It is more commonly used but has a stronger, sweeter taste.

2. How to store cinnamon powder correctly to preserve its freshness?

For optimal preservation, store cinnamon powder in an airtight container, away from direct light and humidity. Avoid excessive temperature variations and it will retain its aroma for an extended period of time.

3. Does cinnamon have health benefits?

French legislation prohibits us from talking about this subject.

4. How to incorporate cinnamon powder into savory recipes?

Cinnamon powder can be added to various savory dishes such as stews, soups, marinades and meat dishes. It brings a warm and fragrant dimension without dominating the other flavors.

5. How much cinnamon powder is recommended in sweet recipes?

The amount of cinnamon powder depends on personal taste and the dish. Generally, start with half a teaspoon for a subtle flavor and adjust to your preference. In desserts, it goes well with fruits, chocolate and pastries.
