TANDOORI - SPICE BLEND - PURCHASE, USES AND RECIPES

Allow me to introduce you to my tandoori , a vibrant and colorful spice blend that is a mainstay of Indian cuisine and remarkably simple to incorporate into your daily meals, from starter to dessert. With mild curry we can say that it is the simplest spice to use.

Here you will discover its history, its use and recipes.

Tandoori , with its moderate heat and powerful, long-lasting aromatic profile, can be found in a variety of dishes and even goes well with sweet recipes. On my blog you will discover amazing culinary creations such as tandoori roasted apples, chocolate mousse, macaroons and even ice cream.

You can use tandoori in various ways, in the most traditional way as the base of a simmered dish, to flavor a tagine or as an exquisite marinade .

When I prepared dishes for Apogée Bar , I like to brown the tandoori mixture over high heat to bring out the aromas, then I add oil and chopped onions , before adding a piece of juicy chicken or a fillet fish accompanied by crunchy vegetables . It is a simple , effective and absolutely tasty method and a very traditional method. Add a little black pepper and that’s it.

In India, it is said that each family has its own version of tandoori, concocted with the spices available at hand.

These spices are carefully selected and combined to create an intensely fragrant blend , perfect for giving character to your dishes.

WHAT IS TANDOORI

Tandoori is much more than a mixture of spices; it is the beating heart of Indian and Mauritius cuisine.

A symphony of flavors that transforms each recipe into an extraordinary journey. Tandoori cuisine is very simple and goes with everything.

Traditionally used to marinate meats before cooking them in the ancestral oven of the same name, tandoori is as versatile as it is captivating.

It imparts aroma to meats , fish , and vegetarian dishes , giving them an unforgettable aromatic profile. It is also used in sauces , soups , and even dares to venture into the world of desserts .

In France, tandoori chicken has become a classic, symbol of a successful culinary mix.

Each tandoori blend will have a unique imprint, varying from one region to another, reflecting the diversity and richness of India's culinary traditions.

Going beyond boundaries and preconceived ideas, the term “tandoori” is not limited to a single spice. It is an elaborate blend, a palette of ingredients carefully chosen according to local traditions and availability. Paprika  for  color,  cumin  and garlic for  depth,  ginger  and  coriander  for freshness,  fenugreek and  turmeric   for balance; each spice plays its part in this culinary masterpiece.

WHAT IS TANDOORI MADE OF AND WHY DOES IT RED?

To understand why the tandoori mixture is red, let's discover its composition:

  • Sweet paprika  : It provides a vibrant reddish color and a slightly sweet flavor.
  • Coriander  : Its lemony and floral notes balance the heat of the other spices.
  • Tomato  : It gives depth and natural acidity, reinforcing the red color.
  • Cumin  : Its warm, earthy taste is essential to the authenticity of the blend.
  • Garlic  : It adds a subtle heat and is known for its health benefits.
  • Cinnamon  : With its sweet and woody scent, it provides aromatic complexity.
  • Lemon  : Its zesty freshness brightens the mixture and enhances the other flavors.

WHY TANDOORI REMINDS US OF MAURITIUS

Melting pot of cultures, with strong Indian influences due to the migratory history of the island. Tandoori, originally from India, has naturally integrated itself into Mauritian cuisine, becoming an essential element of its culinary heritage. This mixture of spices takes its name from a clay oven traditionally buried in the ground, originating from northern India and Afghanistan: the tandoor. It is in this oven that naan bread and especially the famous tandoori chicken are cooked.

In addition, Mauritius is renowned for its tropical flavors and its gentle Creole way of life, which are reflected in its spicy and colorful cuisine, such as tandoori. This spice blend is used in a variety of Mauritian dishes, providing a pop of red color and spicy flavor reminiscent of the island's sunny beaches, bustling markets and rich culture.

Finally, the tandoori is reminiscent of Mauritius because it symbolizes the meeting between Indian culinary traditions and local Mauritian products, creating unique dishes that celebrate the history and diversity of the island. Whether in marinades for chicken or seafood, or even in more surprising preparations like yogurts, tandoori is a tribute to the vibrant flavors of Mauritius. The term “massala” literally means “mixture” in Indian, in reference to the mixture of spices that make up tandoori massala. Culturally, cooking is an art in India, which is passed down from generation to generation, according to religious traditions which have determined certain eating habits.
