In July 2013, during my first trip to Brazil, my future Brazilian wife introduced me to authentic churrasco. In Southern Brazil's Gaucho tradition, barbecue is a culinary art form and a festive lifestyle passed down through generations.

1. Grilled Beef Picanha with Churrasco Rub
Ingredients
- 1 Picanha cap of beef (approx. 1.2 kg with fat cap)
- 3 tbsp Brazilian Churrasco Blend
- Coarse sea salt & olive oil
Preparation
- Score fat cap in a crosshatch pattern.
- Rub oil and Churrasco blend generously over entire piece. Rest 45 minutes.
- Sear fat side down on hot grill for 6-8 minutes, then flip and cook to medium-rare (54°C / 130°F internal temp).
- Rest 10 minutes wrapped in foil before slicing against the grain.
2. Lime & Churrasco Marinated Chicken Skewers
Ingredients
- 600g chicken breast or thigh, cubed
- 2 tbsp Brazilian Churrasco Blend
- Juice of 2 limes
- 3 tbsp olive oil, red bell pepper & red onion chunks
Preparation
- Mix lime juice, olive oil, and Churrasco spices in a bowl.
- Add chicken cubes and marinate in fridge for at least 4 hours.
- Thread chicken, pepper, and onion onto skewers. Grill 12-15 minutes turning often.
3. Caramelized Barbecue Pork Ribs
Ingredients
- 1.5 kg pork ribs rack
- 3 tbsp Brazilian Churrasco Blend
- 2 tbsp honey, 2 tbsp soy sauce, 1 tbsp cider vinegar
Preparation
- Remove thin membrane from bone side of rack.
- Whisk honey, soy sauce, vinegar, and Churrasco seasoning into a marinade.
- Coat ribs thoroughly and marinate 12 hours. Bake or indirect-grill at 150°C (300°F) for 2 hours, basting every 30 minutes.
4. Crispy Gaucho Chicken Wings
Ingredients
- 1 kg chicken wings
- 2 tbsp Brazilian Churrasco Blend
- 1 tbsp cornstarch, 2 tbsp oil
Preparation
- Pat wings dry and toss in oil. In a zip bag, combine cornstarch and Churrasco blend.
- Add wings and shake to coat evenly. Bake at 200°C (400°F) for 35-40 minutes until super crispy.
5. Grilled Garlic & Churrasco Jumbo Prawns
Ingredients
- 12 jumbo prawns
- 1.5 tbsp Brazilian Churrasco Blend
- 2 minced garlic cloves, 4 tbsp olive oil
Preparation
- Devein prawns and toss with olive oil, minced garlic, and Churrasco spices.
- Grill on high heat plancha for 2 to 3 minutes per side. Serve hot with lime wedges.
6. Grilled Stuffed Portobello Mushrooms
Ingredients
- 4 large Portobello mushroom caps
- 1 tbsp Brazilian Churrasco Blend
- 100g crumbled feta cheese, 2 tbsp olive oil
Preparation
- Clean mushroom caps and brush outer skin with oil.
- Dust inside with Churrasco blend and fill cap with crumbled feta.
- Grill over medium heat for 12-15 minutes until tender and cheese softens.
7. Banana Leaf Grilled Fish Fillets
Ingredients
- 4 cod or white fish fillets
- 1 tbsp Brazilian Churrasco Blend
- Lime juice & 2 tbsp olive oil
Preparation
- Marinate fillets for 20 minutes with lime, oil, and Churrasco seasoning.
- Place fillets on banana leaf over grill and cook covered for 8 to 10 minutes.
8. Grilled Churrasco Pineapple with Honey
Ingredients
- 1 fresh pineapple, cored and sliced
- 1/2 tsp Brazilian Churrasco Blend
- 3 tbsp honey, 1 tsp cinnamon
Preparation
- Mix honey, cinnamon, and a tiny pinch of Churrasco blend. Brush over pineapple slices.
- Grill slices 3-4 minutes per side until caramelized. Serve warm with vanilla ice cream.
