This is a fruit infusion (not tea). The dried fruit pieces are hard and need time and heat to rehydrate and release their juices.

- The Temperature: 100°C (212°F). Don't be afraid of the heat; there are no fragile tea leaves to burn here.
- The Time: 10 to 12 minutes. This is the secret. At 5 minutes, the infusion will only be tangy. At 12 minutes, the date and banana will have released their natural sugar for perfect roundness.
- The Dosage: 15 to 20g per liter. Be generous, these are heavy fruits! A large tablespoon per mug.
