Muntok white pepper , which we can sometimes call it, is a pepper with notes of civet, which comes to us from the sunny plantations of the island of Bangka in Indonesia. We are not going to talk to you about its notes but rather about its unique origins and culture:  

Origin and characteristics

Coming from the Piper nigrum pepper tree , Muntok white pepper, to obtain its color, the berries, once ripe, are soaked in water to remove the skin, then dried in the sun to obtain this characteristic white color and spicy notes so prized. 

Cultivation and harvest

Cultivated in rich and fertile soil, the Muntok pepper tree flourishes in a humid tropical climate, typical of this Indonesian region. During our plantation visit to Brazil, we asked if the peppers were harvested mechanically or manually and the peppers are harvested by hand.

Drying to obtain the pepper

After picking, the peppercorns are immersed in spring water to remove the pericarp and then exposed to the tropical sun, a method which preserves the integrity of its aroma. When you buy a white peppercorn, you are buying the core of the black pepper. It is good to know that it is in the pericarp that you have the spiciness of the pepper.
