Cambodian pepper , specifically Kampot PGI pepper , is a valuable export product.  

Kampot is considered  the ideal region for pepper cultivation due to its climatic conditions and fertile soil.

Kampot pepper production reached its peak in the 19th and early 20th centuries, under the French protectorate. However, during the Khmer Rouge period in the 1970s, pepper production almost completely ceased. Fortunately, after the fall of the Khmer Rouge, pepper production slowly resumed.

In 2010, Kampot pepper received Protected Geographical Indication (PGI) status, meaning that only peppers grown in this region can be called “Kampot Pepper”. Today, Kampot pepper is grown without pesticides or chemical fertilizers , respecting ancestral know-how .    

The cultivation of this pepper begins with the selection of the best seeds. Pepper plants are grown on support poles and are regularly watered and fertilized. The harvest takes place once a year, generally between February and April. The pepper berries are picked by hand when the bunches reach optimal ripeness.  

Preparing different colors of pepper is a fascinating process. Kampot black pepper is made by harvesting the berries when they are still green and letting them dry in the sun until they turn black. White Kampot pepper is produced by harvesting the ripe berries and steeping them in boiling water and then in ice water to remove the outer skin, leaving the white grain inside. Kampot red pepper is the rarest and most precious. It is harvested when the berries are completely ripe and red. They are then dried in the sun to retain their vibrant red color.
