EVERYTHING YOU NEED TO KNOW ABOUT ALLSPICE

Pimenta da Jamaica, also known by different local names, is a species of tree in the Myrtaceae family, native to Central America and the Caribbean. It can reach up to 10 meters in height and flourishes in subtropical, temperate and tropical climates.

Its tree and its leaves will smell like cloves.

Its cultivation requires little light and it is characterized by a persistent life cycle.

The optimal planting period extends from September to January, with a first harvest expected between 4 and 5 years after planting. Please note, we are here for the southern hemisphere.

Subsequent harvests can be done every 6 months.

This species grows harmoniously with a wide variety of other trees and smaller crops, as long as the necessary spacing is respected for each species.

Pimenta da Jamaica offers a unique palette of flavors and is treasured in many cuisines around the world for its captivating aroma and taste properties.

Pimenta dioica, commonly known as Pimenta-da-Jamaica or Pimenta-de-Coroa, is a species of tree in the Myrtaceae family, which can reach 10 meters in height. Its dried fruits are used as a condiment, combining easily with other spices and giving off an odor similar to a mixture of cinnamon, black pepper and nutmeg.

This tree has smooth, grayish bark, leathery leaves, flowers in axillary crowns and berry fruits. Native to Central America and the Caribbean, its wood is used to make canes, and its bark, fruits, and seeds are stimulant, carminative, aromatic, and black pepper substitute. In Brazil it is also known under the names murta-pimenta and Pimenta.

The leaves of this tree have medicinal applications (for example, in gynecological disorders or as an analgesic) and in the manufacture of cosmetics and perfumes. The wood is used for the construction of furniture and rural buildings. The flowers are useful for the production of honey and the trees for shading coffee plantations, as hedges or as ornamental plants. It is endemic to the neotropics where its current distribution is limited (Mexico, Belize, Salvador, Guatemala, Honduras, Nicaragua, Cuba and Jamaica).

  2. Keep it at room temperature: This condiment thrives perfectly at room temperature, providing a convenient solution for storage in any kitchen.

  3. Protect it from direct sunlight: As with most spices, it is crucial to avoid direct exposure to sunlight, as this could compromise the quality and freshness of the product.

  4. Choose a cool, dark place: Store your allspice in a cool, dark place, such as a cupboard or cabinet, away from any heat sources, such as the oven or stovetop, to ensure its longevity and optimal aroma.

HOW TO COOK ALLSPICE PEPPER

Allspice, also known as "all-spice", 4-spice is a versatile and fragrant spice that can add a depth of flavor to many dishes. Here's how to use it:

  1. With meats: Its woody and spicy flavor goes particularly well with meats, particularly game such as deer or wild boar. It can be used in marinades to give an exotic touch to grilled foods. An aromatic pepper, it likes strong meats.

GROWING JAMAICA PEPPER

It is a spice that is very easy to cultivate in South America. Our Jamaican Pepper has two sources.

Our main source is Brazil. It is a spice that comes from a majestic tree. Once it has flowered, bees come to gather in the tree, the flowers will wither and then the berries will appear.

They will be harvested when ripe and then dried in the Sun.

The grains will have a brown color after drying, if you take a clay ball and put it next to the allspice you will say it is the same color .

The berries can be small, medium or even gigantic . It's a berry that rolls under the finger like a pearl.

The inside of this berry is hollow with two small seeds inside.

Did you know: That it is a tree that likes a hot and humid climate with rainfall reaching 1300mm per year. It loves soil humidity of 80° and a PH between 5 and 6.

Average temperature 25°C.

Production per hectare is around 400 to 500kg per year.

In Brazil, it is in Bahia that we produce the most. Jamaica is the best producer with 70% of world production. Producing country: Mexico, Costa Rica, Guatemala and Cuba.

PICKING JAMAICAN PEPPER

As with our Madagascar black pepper and our vanilla pods , Le Comptoir de Toamasina wishes to only have a hand-picked Jamaican pepper.

We will explain the pickings to you.

Did you know, it is in the South-East region of Bahia that the harvest takes place between December and February. It is carried out 3 to 4 months after flowering.

Allspice production begins in the fourth year after planting the tree.

The fruits should be harvested when fully ripe. Its color must be green and above all it must be too ripe so that it does not lose its aroma.

Now, we will explain the two harvesting methods, one manual and the other chemical.

Manual harvesting:  It is very often women who will use tripod ladders to harvest  allspice peppercorns .

The branches are tied, then the fruit clusters are harvested and finally put in a bag.

The fruits are separated from the stems. The daily yield is around 4kg of processed pepper.

Chemical harvesting:  Harvesting involves using a phytoregulating product which will act by releasing ethylene which will cause the fruit to fall.

The product is sprayed on the plant, it is 20ml of product per 100 liters of water.

From the second day the flower buds begin to fall with a peak on the fourth and fifth days.

Fallen fruit should be harvested throughout the day to maintain the best quality.
