Bahia, for me, is not a simple tourist destination, it is a crush. The climate, the vegetation, the light — everything reminds me of Madagascar, where the Comptoir adventure began. I really thought of this aromatic profile on the spot, during a stay in Salvador, trying to put what I felt in a cup: the heat, the nonchalance, the maracujá squeezed at the counter of a lanchonete, and the omnipresent lemon.

It is a 100% Brazilian tribute in spirit. The Sencha green tea base, married with a little Pai Mu Tan white tea, is my little signature: the white tea brings a cottony sweetness that rounds out the acidity of the lemon and passion fruit, preventing the blend from becoming aggressive. It is a tea that I drink mainly iced, throughout the summer, while thinking of Bahia.

Bahia, Salvador and maracujá: the soul of this tea

The State of Bahia, in the Brazilian Northeast, is the vibrant cradle of Afro-Brazilian culture. Its capital, Salvador, was the very first capital of colonial Brazil (1549-1763) and remains today the undisputed epicenter of samba, candomblé, capoeira and cuisine with dendê oil. It is a sunny, eminently festive land, where the famous "Bahian joy of living" is not a cliché, but a true everyday art of living.

Passion fruit — maracujá — is omnipresent there: consumed as an iced and frothy juice in the morning, it sets the rhythm for hot days. Its deep acidity and hint of bitterness make it a fruit that naturally calls for the sharp acidity of lemon. It is this summer meeting, observed on the spot, that the Sun of Bahia puts in the cup: the tropical generosity of maracujá, tempered by the zesty freshness of lemon and lemongrass, all on a base of green and white tea sweet enough not to crush the fruits.

How to prepare Sun of Bahia Green Tea

  1. Measure: about 2 grams of tea for each 250 ml cup of water.
  2. Heat the water: to 75-80°C (do not boil to preserve the Pai Mu Tan white tea).
  3. Steep: let steep for 2 to 3 minutes (up to 4 min for a more pronounced citrus taste).
  4. Tasting: enjoy hot, or prepare it in a pitcher over ice cubes.

Arnaud's Secret: the "homemade" recipe (for 100g)

  • Sencha green tea: 70g
  • Pai Mu Tan white tea: 10g
  • Lemongrass: 5g (about 1 dried stalk)
  • Dried papaya: 4g
  • Dried pineapple: 4g
  • Dried passionflower (passion fruit): 2g
  • Dried marigold flowers and rose petals: 2g
  • Dried lemon peel: 2g
  • Natural passion fruit and lemon flavor: 1g

Mix all dry ingredients in a large bowl. Add the natural flavor and mix well so the flavor is evenly distributed. Store in an airtight container.

1. Tropical Bahia Iced Tea (Hot method)

Ingredients

  • 20g Sun of Bahia Green Tea
  • 1 liter filtered water
  • Lemon and lime slices
  • Ice cubes

Preparation

  1. Heat the water until simmering (75°C). Off the heat, steep the tea for 3 to 5 minutes.
  2. Strain carefully to remove leaves and fruit pieces.
  3. Let cool to room temperature, then place in the refrigerator.
  4. Serve in tall glasses filled with ice cubes with a nice slice of lemon. Tip: add a dash of mango juice!
2. "Morning in Salvador" Mocktail (alcohol-free)

Ingredients

  • 15 cl steeped and cooled Sun of Bahia tea
  • 5 cl passion fruit puree or nectar
  • 2 cl cane sugar syrup
  • Sparkling water and mint leaves

Preparation

  1. In a tall glass, place the passion fruit puree and the cane syrup.
  2. Fill with ice cubes, then pour in the very cold green tea.
  3. Top up with sparkling water, stir gently, and garnish with mint.
3. "Caipi-Bahia" Cocktail (with alcohol)

Ingredients

  • 6 cl strong brewed and cooled Sun of Bahia green tea
  • 5 cl Brazilian Cachaça
  • 1/2 lime cut into cubes
  • 2 teaspoons brown sugar
  • Crushed ice

Preparation

  1. In a short glass, crush the lime with the brown sugar using a muddler.
  2. Add the cachaça and fill the glass with crushed ice.
  3. Pour the green tea over it. Stir with a spoon from the bottom up and serve.
4. Exotic Passion-Lemon Sorbet

Ingredients

  • 30 cl very concentrated Sun of Bahia tea infusion
  • 200g passion fruit pulp (with or without seeds)
  • 80g liquid cane sugar
  • The juice of a lemon

Preparation

  1. Mix the cooled tea, passion fruit pulp, lemon juice and cane syrup.
  2. Pass everything in an ice cream maker until a nice consistency is obtained.
  3. Alternative without an ice cream maker: pour into a dish in the freezer and scrape with a fork every half hour to obtain a Bahian granita.
5. Pineapple "Cold Brew" Iced Tea

Ingredients

  • 15g Sun of Bahia Green Tea
  • 1 Liter cold filtered water
  • Small cubes of fresh pineapple

Preparation

  1. Place the tea leaves directly into the pitcher of cold water. Let steep 4 hours in the refrigerator.
  2. Strain the tea.
  3. Add the pineapple cubes to the infusion and let rest another 30 minutes in the fridge. Serve with lots of ice cubes. Zero bitterness guaranteed!
