The strawberry-rhubarb duo is a classic pastry from northern France and Europe — everyone knows strawberry-rhubarb pie. For me, having grown up between the Var and the North of France before moving to Brazil, it's a marriage that has always spoken to me. Putting it in tea was an obvious choice: rhubarb brings this frank, almost astringent acidity that strawberry softens.
The technical point is the balance. Rhubarb alone would be too harsh in an infusion; strawberry alone, too flat and candy-like. You have to dose to the gram to find the right tension of the pie. I start on a base of frank Sencha, quite vegetal, which does not let itself be dominated by the fruit and keeps the blend adult rather than childish. It is an exceptional snack tea, just as good hot in winter as iced on sunny days.

- 40 cl heavy cream, 10 cl milk

- 50g sugar
- 3 gelatin sheets
Preparation
- Heat the cream, milk and sugar to 80°C. Off the heat, add the tea and cover for 4 minutes. Strain carefully.
- Stir in the gelatin (previously softened in cold water) and whisk to dissolve well.
- Distribute into glasses. Let set in the fridge for at least 4 hours. Serve with rhubarb compote or fresh strawberries.
