How did Arnaud Sion discover guarana?
The year 2015 marked a decisive turning point in my life. At the time, I had already built a reputation as an expert in Bourbon vanilla from Madagascar, a spice that had captivated my senses. But it was in Brazil, in 2015, that I had an encounter that would redefine my path.
I had landed in Bahia, a Brazilian state known for its lush biodiversity. 90 km from the city of Ilhéus, I discovered a guarana plantation, an energizing and mysterious berry. The local farmers, with their ancestral knowledge, initiated me into the secrets of this crop: recognizing seed quality and understanding the plant's cycle.
This experience broadened my vision of fair trade. I saw in these little red seeds an opportunity to forge deep connections with local communities. In November 2019, after several years of learning, I established a direct partnership with a guarana plantation. Comptoir de Toamasina thus became the bridge between the best vanilla from Madagascar and premium Brazilian guarana.
What is guarana and what does it taste like?
Guarana is the fruit of the guaranazeiro. Its benefits are mainly attributed to its high content of three xanthines: caffeine, theobromine, and theophylline. These substances are natural stimulants that reduce fatigue, the feeling of weariness, and increase concentration in a more sustained and long-lasting way than coffee.
Guarana seeds, once ripe, reveal a harsh and robust flavor, recalling the richness of the earth they come from. The first impression is often surprising: the taste evokes a blend of earthy notes with a hint of bitterness that gradually fades, giving way to a slight refreshing acidity.
In Brazil, it is often transformed into a very popular sweet carbonated beverage, but at Comptoir de Toamasina, we celebrate it in its purest and rawest form.

How is guarana cultivated and processed?
Guarana fruits are distinguished by their predominant red color with orange nuances. At full maturity, the capsule partially opens, revealing a black seed wrapped in a white aril (giving it that "eye" appearance). Harvesting takes place at this precise stage to prevent the seeds from falling.
Guarana is a perennial climbing shrub. The Brazilian Agricultural Research Corporation (Embrapa) has developed selected high-productivity cultivars, resistant to anthracnose, offering a stable yield between 400g and 1.5 kg of seeds per plant.
After harvesting, the fruit is pulped, washed, and then slowly roasted in clay or metal containers over low heat. It is this gentle and controlled roasting that guarantees the perfect moisture level (the famous "cracking point") and preserves the integrity of the natural caffeine.
☕ Dosage & Use: The secret of energy
To enjoy the benefits of guarana without excess, it is recommended to consume 1 level teaspoon per day (about 4 grams), preferably in the morning or before physical exertion.
How to integrate it easily?
In orange or fruit juice: The acidity and natural sugar of orange juice help mask the slight bitterness of guarana for an immediate vitamin boost.
In a smoothie or Açai Bowl: Blended with banana, açai powder, and plant-based milk in a mixer.
