This tea is harvested in the first days of spring, just before the leaves of the tea plant fully blossom. At this stage, the young buds are still covered in silky white down, which is the origin of the name “white tea”.

Ideal water temperature: 75°C  - The key to revealing the smoothness and complexity of Fujian white tea is to maintain a constant water temperature of 75°C.

Recommended infusion time: between 7 and 10 minutes  - Let the tea steep for between 7 and 10 minutes to release its subtle and delicate aromas.

Amount of tea: 2 to 3 tablespoons, or approximately 6g, per liter of water  - For optimal flavor, use 2 to 3 tablespoons of tea, or approximately 6g, per liter of water.

Choice of Water: Use pure water for an authentic taste experience  - Pure water is essential to preserve the integrity of the delicate flavors of Fujian white tea.

  • 500 ml of white rum
  • 2 tablespoons of loose white tea
  • 100 g of cane sugar
  • Zest of a lime

Instructions :

  1. In a clean, dry glass jar, mix the white rum and white tea.
  2. Add the cane sugar and lime zest.
  3. Close the jar tightly and let it steep for at least a week in a cool, dark place.
  4. After a week, filter the mixture through a fine strainer to remove the tea leaves and lemon zest.
  5. Transfer the arranged rum to a clean bottle and store it in the refrigerator until you are ready to serve.

“Moonlight” Cocktail

Ingredients :

  • 60 ml of rum mixed with white tea
  • 30 ml lime juice
  • 15 ml of cane sugar syrup
  • 1 egg white
  • Ice cubes
  • Lime zest for garnish

Instructions :

Ingredients :

  • 1 roll of shortcrust pastry
  • 500 g fresh strawberries, washed and hulled
  • 500 ml of milk
  • 4 egg yolks
  • 100 g of sugar
  • 40 g cornstarch
  • 1 teaspoon of vanilla extract
  • Icing sugar for sprinkling (optional)

Instructions :

  1. Preheat your oven to 180°C.
  2. Spread the shortcrust pastry on a lightly floured surface and cut out circles using a cookie cutter.
  3. Place the circles of dough in tartlet molds and prick the bottom with a fork.
