I am Arnaud Sion, my nickname has been Arnaud Vanille since the Thalassa Destination report in 2014. This is the nickname I got on the Sébastopol market, because it all started on this Lille market in March 2010. I worked in the cold, in the rain, in the heat and in pleasant temperatures to develop my family business.

Le Comptoir de Toamasina is today the  essential address for lovers of exceptional vanilla .

If you are looking for a vanilla pod for your culinary creations, your restaurant, your pastries, then let me introduce you to Tahitensis vanilla from Papua New Guinea , a real aromatic nugget.

Why choose this vanilla?

  1. Grandiose Origin  : Our pods come from lush Papua New Guinea, a region that gives vanilla exotic and spicy aromas. Before 2010, few people knew this vanilla with spicy and musky notes which give way to a long moment of floral vanilla. It replaces tahitensis vanilla from Tahiti. Imagine a vanilla with mucs, hints of spices and a long moment of floral vanilla. This is what vanilla tahitensis from Papua offers.

  2. The best quality  : We only offer gourmet quality which is the best quality in the world of vanilla. Each pod is carefully selected for incredible notes for your pastries and mixed rum for example.

  3. Varieties that we offer for purchase by the pod  :

    • Tahitensis Vanilla from Papua  : A superb pod with notes of leather and spices, which extend into a delicate floral flavor. Perfect for pastries, it is a must-have for any sweet cuisine lover.
    • Planifolia Vanilla from Papua  : Notes of spices and leather, with a touch of musk, evolving into an intense chocolate vanilla. Ideal for enhancing your desserts and white meats.

Why wait ?  Come to the  Comptoir de Toamasina  and discover these taste treasures. Since 2010, we have been passionate about vanilla from around the world, and we are delighted to share this passion with you

Vanilla Tahitensis , also known as Vanilla x Tahitensis , is a hybrid vanilla variety that awakens the senses and transports the taste buds to exotic lands. We will delve into the fascinating history of this young vanilla, its unique characteristics and its role in global gastronomy.

Origins and Cultivation

  1. Land of Paradise  :

    • Tahitensis vanilla finds its origins on the paradise island of  Tahiti . However, it is now grown in various parts of the globe, including  Papua New Guinea ,  Indonesia , the  Cook Islands  and  Niue .
    • This variety results from a cross between the vanilla plants  Vanilla planifolia  and  Vanilla odorata .
  2. Preparation Method  :

    • Tahitensis vanilla stands out for its unique preparation method. It is fertilized by hand, like vanilla planifolia, but it also benefits from a traditional method of refining in the sun in Tahiti in Papua, the tahitensis vanilla pod will undergo scalding.
    • This combination of attentive care gives it exceptional taste and physical characteristics.

Aromatic and Physical Characteristics

  1. Taste  :

    • Tahitensis vanilla is  very fragrant and floral . Its aromas are captivating, with exotic and floral notes. In Tahiti, we are on notes that are going to be anise. In Papua musk and a very floral vanilla. This makes it a rare vanilla.
    • Unlike other varieties, it is  indehiscent , meaning its pods do not open when ripe. They remain fleshy, allowing maximum concentration of aromas and flavors. But the tahitensis variety has a lower level of vanilla than the planifolia. The Bahian variety is the vanilla with the best humidity level.
  2. Physical  :

    • The Tahitensis vanilla pods are  impressive  in size for Tahitian vanilla. They can reach  4 to 5 centimeters in diameter , double or even triple the size of a fragrans vanilla pod.
    • Their water content is higher (40 to 45%) than that of bourbon vanilla (30 to 37%). However, their vanillin level is lower than that of the vanilla planifolia variety. But in Papua with scalding we have a humidity level between 30 and 33%.
    • To obtain a vanilla scent and aroma,  half a pod of Tahitian vanilla  is enough or 1 tahitensis vanilla from Papua, unlike bourbon vanilla from Madagascar which requires the use of the whole pod.

Rare and Luxurious

  1. Low Production  :

    • Tahitensis vanilla is relatively rare, making it a luxurious variety.
    • At the end of 2019, it was sold at  €800 per kilo , demonstrating its strong demand and appeal. For tahitensis vanilla from Papua we are around $150 per kilo.
  2. No “Vanilla Bourbon” Label  :

    • Unlike Madagascar vanilla, Tahitian vanilla is not part of the  “bourbon vanilla” appellation .
    • This label is exclusively reserved for Madagascar, Reunion, Comoros, Mauritius and Seychelles.

Tahitian vanilla ( or vanilla tahitensis ) is a precious and captivating variety. Here's how to brew it and enjoy its unique flavors:

  1. Infusion in sugar or rum  : Place a Tahitian vanilla pod in a pot of sugar or a bottle of rum (preferably Tahitian rum!). Let it infuse for several weeks. You will thus obtain a sugar or rum flavored with vanilla.

  2. Infusion in liquids  : Infuse a vanilla pod in hot milk to obtain vanilla milk. Heat the milk to 40°C, add the pod and leave to infuse for 10 to 15 minutes. You can also infuse in other liquids like cream or syrup.

  3. Use in cooking  : Tahitian vanilla is ideal for flavoring your desserts, crème brûlées, panna cottas, ice creams, and even your exotic cocktails. Its delicate notes of flowers and fruits will captivate your taste buds.

Remember that Tahitian vanilla is grown primarily in Tahiti, Papua New Guinea, Indonesia, Niue and the Cook Islands. It offers an unforgettable taste experience. On our channel and on my blog you will know everything about using this vanilla with floral notes. Buy a prestigious vanilla online.

Papua New Guinea vanilla in its Tahitensis variety is incredible for its use in savory and sweet dishes. There are a lot of vanilla beans in this pod and the husk will give the vanilla flavor to your recipe. When you sell Papua vanilla, you say to yourself how unique this vanilla is with its organoleptic advantage for desserts, thanks to its aromas. Personally I like it in desserts and cocktails. On the other hand, we will avoid adding black seeds in cocktails. Discover my recipe ideas:

  2. Airtight container  : Use a glass tube or closed jar to avoid exposure to air.
  3. Waxed paper  : Wrap the pods in waxed paper to prevent contact with air.
  4. Avoid temperature variations  : Protect the flavor of vanilla by avoiding thermal shock.

Tahitian vanilla from Papua is an aromatic treasure to be preserved!

Are you wondering what to replace Papuan tahitensis vanilla with? Here are the two best vanillas to replace this vanilla. But you should know that the aromas will be different compared to the terroir of Papuan vanilla.

  1. Tahitian vanilla : Tahitian vanilla is close to the Tahitensis variety from Papua. It is softer and floral, with fruity nuances. Use it as an alternative to maintain a similar flavor.
  2. Brazilian Vanilla : Brazilian vanilla is an interesting option. It can be both Vanilla Planifolia or Vanilla Tahitensis . It offers a woody, floral and tangy aroma.

Now you know everything you need to replace this Papua New Guinea vanilla with. We do not recommend changing it for powder.
