Para Black Pepper found in France under the name Belém pepper: An Invaluable Wealth
Cultivated in the lush Para region of Brazil, black pepper is nicknamed Belém pepper in France, which is a false name because in Belem you do not have any pepper production.
The aromatic power of Para pepper is lower than pepper from other regions of Brazil. It is also one of the cheapest peppers in the world. Bélem black pepper can be bought for less than 3 euros per kilo.
It offers tangy notes due to the soil of the Amazon which is acidic, it has a citric touch, with rounded notes. Some will see notes of lily, a touch of hibiscus. It is a good pepper for every day or for making cold meats.
Black Pepper from Rio Tocantins: A Natural Force
It was in 2020 that a European importer introduced me to this pepper. It is true that Arnaud looked for a new pepper from Brazil in addition to black pepper from Saint Mathieu.
Harvested in the lush plantations of Mocajuba, Rio Tocantins black pepper is distinguished by its potency of 8/10 and its smoky and woody notes, evoking the immensity of the Amazon. In the mouth, it is spicy with very good length, ideal for spicing up your savory dishes, especially meats.
Saint Mathieu Black Pepper: Wild Intensity
Cultivated in the state of Espirito Santo, Saint Matthew black pepper is one of the strongest in the world with a potency of 9.5/10. It offers wild, woody and lemony notes, bringing unparalleled richness to your culinary preparations. It is a pepper that comes from the Ranger expedition. Arnaud went to the state of Espirito Santo to buy this exceptional pepper.
