Acai is the berry of a palm tree (Euterpe oleracea) that grows in the wetlands of the Brazilian Amazon, especially in the state of Pará. Over there, it is not a fad for Westerners: it is a daily staple, eaten thick, by the spoonful, often savory, accompanied by cassava flour or fresh fish.
The berry itself is tiny and composed of almost 90% of a large pit — the edible part is just a very thin purple skin. This explains the rarity of its pulp, and why it is never found fresh in Europe: it ferments and oxidizes just a few hours after harvesting. In terms of taste, acai is not a sweet candy: its natural flavor oscillates between very ripe red fruits, a beautiful bitterness of raw cocoa and an earthy note, with a very pleasant fatty texture in the mouth.

"In November 2015, when I arrived in Brazil, I wanted to find an acai that was off the beaten path of mass exports. In 2016, I searched for more than 3 months for the best plantation. I didn't want to condone the dangerous picking where children climb 20 meters high in wild palm trees bare-handed, nor the deforestation to plant the pinot palm. And I found it: an eco-responsible project with real reforestation in the heart of the Amazon."

RWD Drying: The secret of our Acai powder
The fruits are harvested, transported in crates and powdered ideally within 24 to 48 hours. Upon arrival in the processing area, they are washed in vats then sieved, washed again — then comes the step that makes all the difference compared to classic powder on the market.
We selected a company that stands out for a highly precise technique: the Refractance Window Drying (RWD) method. This cutting-edge process uses a Mylar® sheet that diffuses the heat of moving water heated between 95 and 98°C. The liquid acai pulp, spread in a very thin layer on this sheet, is effectively dried in just 5 to 10 minutes, the fruit temperature never exceeding 30 to 70°C.
Unlike freeze-drying (very long and expensive) or spray drying (which burns the product at high temperatures), RWD optimally preserves lipids, antioxidants and the intense purple pigment of the acai. How Arnaud Sion discovered Acai
In 2017, Arnaud Sion, passionate creator of Le Comptoir de Toamasina and nature lover, undertook an epic pickup truck journey from Belo Horizonte to the edges of the Amazon rainforest, in Pará. His absolute goal? To discover the secrets of acai, that superfood whose purple berries nourish millions of Brazilians in the North.
Traveling thousands of kilometers of bumpy roads and dirt tracks, he left the city lights behind to plunge into the Cerrado (where he would also discover the tonka bean and a rare wild vanilla). In the heart of this Amazonian region, it was as part of a real reforestation project that he finally settled down.
Here, farming is sustainable: drip irrigation is used during the dry season, and most importantly, workers are respected, benefiting from local infrastructure and a school for their children. Far from international speculation, this project has profound human and environmental value.
What is Acai? (The 6 varieties)
The most common acai in Brazil is the small, deep purple fruit of the Euterpe oleracea Mart. palm (Arecaceae family). The state of Pará is the world's leading producer, controlling almost 90% of the market. This palm tree loves water: an adult tree absorbs about 120 liters of water per day!
In Brazil, EMBRAPA (the Brazilian agricultural research institute) has cataloged six botanical varieties of acai. This is expert knowledge that few European sellers share:
- Purple or Black Acai (Roxo/Preto): The queen variety of Pará, the one we turn into powder. Tiny pit, purple skin highly concentrated in pigments.
- Sangue de Boi Acai: "Ox blood" red color. Less consumed because its consistency is mushier and its taste differs from classic acai.
- Açu Acai: Peruvian Amazon variety. Produces up to 70% more pulp, but its flesh is very fragile to store.
- White Acai (Branco): The rarest. Very popular in Pará, its seed is greenish (no purple pigments) and its price is significantly higher.
- Espada Acai: Recognizable by its sword-shaped clusters. Very common on Combu Island (opposite Belém).
- Chumbinho Acai: The miniature fruit, weighing less than 1g. Not viable for pulp production.
Acai contains NO Vitamin C!
This is a widespread marketing myth in Europe: acai is often sold as a vitamin C bomb. This is totally false. Acai is rich in lipids (good fats), fiber and powerful antioxidants (anthocyanins), but it contains practically no vitamin C. 1. The Original Acai Base (Professional Sorbet Recipe)
To make a large amount of commercial sorbet
This is the secret formula used by acai shops in Brazil to transform powder or pulp into a perfect sorbet that does not crystallize.
- Ingredients: Water (75%), RWD Acai powder (3%), Cane sugar (14%), Glucose or invert sugar (6%), Ice cream stabilizer (2%).
- Preparation: Thoroughly mix the dry acai powder with the sugars and stabilizer. Sprinkle into the water while mixing with an immersion blender. Churn in an ice cream maker. You will get a smooth, creamy and very purple sorbet.
2. The Traditional Acai Bowl from Brazil (Açaí na tigela)

The golden rule for a real bowl: it must be very thick (you eat it with a spoon, you don't drink it).
- Place 1 or 2 bananas previously frozen in slices in your blender.
- Add 100g of frozen red fruits (blueberries, raspberries).

6. Raw and Vegan Acai "Cheesecake" (Raw Cake)

- The base: Blend 150g pitted dates with 150g pecans and a pinch of salt. Press this sticky mixture into the bottom of a springform pan.
- The purple cream: Soak 200g of raw cashews in hot water for 1 hour. Drain them. Blend the cashews with 10cl of melted coconut oil, the juice of one lemon, 5 tbsp of maple syrup and 3 tbsp of RWD Acai powder until you get an ultra-smooth purple cream.
- Pour the cream over the base, smooth, and place in the freezer for 4 hours. Take out 20 minutes before tasting. A majestic purple dessert!
