"Back-to-School Recipes — Autumn Special" is the new digital cookbook from Le Comptoir de Toamasina, co-signed by Arnaud Sion and his son Giovanni. Across 108 full-color pages, it gathers 98 fully illustrated recipes for cooking all season long: from Sunday night's pumpkin and chestnut soup to weekend jams, including autumn cocktails and a complete journey into the cuisine of Bahia.
Following our summer ice cream notebook, here is the continuation of our family collection. The principle remains the same: accessible, family-tested recipes where the spice is never just a decoration but the ingredient that makes the difference — wild Voatsiperifery pepper on salmon gravlax, Timut berry in a pumpkin risotto, tonka bean in a crème brûlée, Bourbon vanilla in a professional-style flan.

A book born in our kitchen
Since 2010, Le Comptoir de Toamasina has been selecting vanillas, peppers and treasures from Brazil. But our finest discoveries don't just happen in the plantations: they happen in our kitchen, on Wednesday afternoons, when Giovanni climbs onto his stool to taste the cookie dough.
This summer, our ice cream notebook was shared far beyond what we imagined. So when the first figs arrived and the evenings grew shorter, the obvious choice was made: we had to write the sequel. An autumn book, with warming dishes, desserts that smell of vanilla, and the Bahian recipes that I have been preparing since my years in Brazil.
Giovanni demanded his own chapter — four alcohol-free cocktails he created for children — and he stuffed the book with his own tips. This book is us: a family split between France and Brazil, cooking with spices like others write with words.
