There are mornings when you look for a spark to start the day. It is to breathe in this sensation of inner warmth that we selected Souffle Solaire — Énergie & Vitalité N°09. If our "Nocturnal Journey" blend is an ode to twilight, this Souffle Solaire is a celebration of the dawn.

At Le Comptoir de Toamasina, we want to offer you teas and herbal teas for a unique and complex tasting experience. We sought to capture the sensation of a sunbeam on the skin in the middle of winter. This blend is a small feat of balance: it manages the tour de force of marrying Rooibos, a plant with a round texture, with Green Mate, a plant with an assertive character.

  • On the nose: it's an immediate journey to a spice stall. Cardamom and orange dominate the attack, followed by the peppery warmth of ginger. The woody base of the rooibos anchors the whole.
  • To the eye: a deep amber liquor, with coppery reflections, typical of the marriage between the red of rooibos and the gold of mate.
  • On the palate: the attack is lively. The ginger tickles the tongue pleasantly, immediately softened by the smoothness of the rooibos and the fruity note of the orange. The mate brings a vegetal structure, without excessive astringency. The finish is fresh, carried by the cardamom.

Preparation tips: taming the fire

This blend requires specific preparation to extract the strength of the spices without burning the finesse of the mate.

  • Temperature: 100°C. Unlike pure mate, this blend requires boiling water to allow the rooibos, orange peels, and roots (ginger, licorice) to release their aromas. The green mate used here is robust and can withstand this heat.
  • Dosage: 17 to 20g per liter. Be generous (4 to 5g for a large mug) to have body and texture.
  • Time: 7 to 10 minutes. At 7 minutes, a balance where orange dominates. At 10 minutes, all the heat of the ginger and the power of the mate are fully expressed.
