1. Authentic Infused Pear-Rhubarb Crumble

Steep 3 tbsp of Orchard Delight in 20cl of simmering water for a very concentrated infusion. Strain. Use this infused syrup to gently stew your pears and pieces of fresh rhubarb in a pan before covering them with your crumble dough. The tea spices will sublime the fresh fruits!

2. Pastry Glaze Syrup

Boil 250g of sugar with 250ml of water. Off the heat, add 3 tbsp of the Orchard Delight blend. Let steep until completely cooled and strain. This deliciously red syrup flavored with cinnamon/vanilla is perfect for topping crepes, waffles, or for soaking the biscuit of a red fruit charlotte.

3. Pears Poached in Orchard Delight

Prepare 1 liter of Orchard Delight infusion (15g). In a saucepan, plunge 4 peeled whole pears into this hot infusion with 50g of cane sugar. Poach over very low heat for 30 minutes. The pears will take on a magnificent glowing red color (thanks to the beetroot in the tea) and soak up the aromas of cinnamon and vanilla. Serve warm with a scoop of vanilla ice cream.

Preparation tips: slow cooking

As with a cake, time is a key ingredient. The dried fruits must be given time to rehydrate to release their juices.

  • Water: use boiling water.
  • Temperature: 100°C. Unlike green teas, this fruit blend needs heat to express all its aromatic power.
  • Time: 7 to 10 minutes. Don't be in a hurry — at 10 minutes, the rhubarb, plum and date will have given all their body to the water for a "syrupy" infusion.
  • Dosage: 12 to 15g per liter. A well-heaped spoon to be sure to have all the pieces of fruit.
