A Rarity Explained by the Peppercorn

Unlike black pepper (harvested green before maturity), red pepper requires the berry to ripen fully on the vine. However, once completely ripe, the berry's pericarp becomes crumbly and fragile—it tears or crushes easily at the slightest shock. It is this fragility, far more than simple sorting, that necessitates an entirely manual harvest, grain by grain, and explains the relative rarity of this color compared to black or white.

What are the flavors of Kampot red pepper?

Kampot Red Pepper is renowned for its complex and captivating flavors. With aromas reminiscent of fruit compote, it offers nuances of Morello cherry and candied cherries that delight the senses from the very first contact. On the palate, it reveals sweet and soft flavors, enhanced by subtle touches of vanilla and citrus, notably orange peel. It finishes on a delicate sweet note.

Although less intense than Kampot black pepper, its subtle heat adds a refined touch to dishes, providing a balanced and sophisticated culinary experience. That is why I use it in my recipes to replace vanilla: its flavor complexity ends on a delicate sweet note, making it an ideal ally for sweet-and-savory dishes as well as desserts.

Two cultivars, and nothing else: the PGI specifications

The PGI specifications prohibit the introduction of any exogenous variety: propagation is carried out exclusively by cuttings from local mother vines, originating from two historical cultivars. Kamchay (small leaves), which grows slowly, offers a high density of berries and a very strong concentration of essential oils. Lampong (or Belantoeung, large leaves), which is more vigorous, offers higher yields and a more direct, frank heat.

The Thermal Secret: From Red Berry to Dry Peppercorn

  1. Harvested grain by grain (March-May): the berries ripen fully on the vine, load up on natural fructose, and take on their cherry red hue.
  2. Manual sorting: on the very day of the harvest, the bunches are destemmed by hand, the red berries separated from the green and yellow ones with absolute rigor.
  3. Scalding, the secret of color: the berries are immersed in boiling water at 100°C for exactly 5 minutes. This thermal shock disinfects the surface and inactivates the browning enzymes (polyphenol oxidases) that would turn the berry black, as is the case for classic black pepper.
  4. Drying below 55°C: the berries dry for 3 to 4 days under shaded and ventilated structures. Above 55°C, aromatic compounds degrade rapidly, and the pepper loses its complex fruity and floral notes.
