Gourmand is my "gateway" tea. The one I recommend to people who think they don't like green tea, or to families who want a tea that children will drink with pleasure. Strawberry and raspberry are immediately reassuring, they evoke childhood, syrup, fruits from the garden. No strong tannins, no off-putting bitterness: just fruit and vegetal sweetness.

But beware, "easy" does not mean "sloppy": I build it on a real Chinese Sencha base, with real fruit pieces and rose petals, not just an aroma on anonymous tea. The secret is to keep the raspberry present enough to bring that little liveliness that prevents the strawberry from falling into excess sweetness. It's a tea of simple pleasure, and I totally assume it — not all teas need to be complex to be excellent.

Strawberry and raspberry: the timeless red duo

Strawberry (Fragaria) and raspberry (Rubus idaeus) are two emblems of summer red fruits. Fun botanical fact: neither of them are "true" fruits in the strict sense. The strawberry is a "false fruit" — what we eat is the fleshy receptacle of the flower, the real fruits being the small seeds (achenes) on its surface. The raspberry is an aggregate fruit, an assembly of dozens of small drupes.

Their association is a pastry classic precisely because they perfectly complement each other: strawberry brings sweet roundness, raspberry tangy liveliness and deep aroma. How to prepare Gourmand Green Tea

  1. Measure: about 2 grams of tea for each 250 ml cup of water.
  2. Heat the water: to 75-80°C. Water that is too hot can make tea bitter, do not let it boil.
  3. Steep: 2 to 3 minutes (up to 5 minutes for a stronger fruit taste).
  4. Enjoy: strain and enjoy. For a summer version, let cool and serve over ice.

  • Sencha green tea: 80g
  • Dried strawberries: 10g
  • Dried raspberries: 10g
  • Dried rose petals: 1g
  • Natural strawberry and raspberry flavor: 1g

Mix all the dry ingredients in a large bowl. Add the natural flavor and mix well so the flavors are distributed. Store your blend in an airtight jar.

Ingredients

  • 500 ml brewed and cooled Strawberry Raspberry Green Tea
  • 250 ml fresh apple juice
  • 250 ml sparkling ginger ale
  • 100 ml strawberry syrup
  • Fresh strawberries, lime slices, crushed ice

Preparation

  1. In a large pitcher, mix the green tea with the apple juice and syrup.
  2. Gently add the ginger ale to keep the bubbles.
  3. Garnish with fresh strawberries and lime slices. Add crushed ice just before serving.
2. Strawberry Raspberry Infused Rum (Rhum Arrangé)

Ingredients

  • 1 liter white agricultural rum
  • 20 cl very strong brewed and cooled Gourmand green tea
  • 150g fresh strawberries
  • 50g fresh raspberries
  • 2 tbsp cane sugar

Preparation

  1. Cut the strawberries in half. Pour the rum into a large airtight jar.
  2. Add the fruit, the concentrated tea and the cane sugar.
  3. Let macerate for 4 to 6 weeks away from light, stirring gently from time to time. Strain before serving.
3. Fruity Iced Tea (Cold Brew Method)

Ingredients

  • 15g Gourmand Green Tea
  • 1 Liter cold filtered water
  • A few fresh mint leaves

Preparation

  1. Place the tea directly into the cold water and let steep in the refrigerator for 4 hours.
  2. Strain the liquor into a pretty pitcher.
  3. Add fresh mint and serve very cold with ice cubes. Cold Brew prevents any bitterness!
4. Exotic Strawberry-Sencha Sorbet

Ingredients

  • 20 cl strong brewed and cooled Gourmand green tea
  • 400g frozen strawberries
  • 2 tbsp agave syrup or honey

Preparation

  1. Pour the tea, frozen strawberries and syrup into a powerful blender.
  2. Blend until you get a very creamy sorbet texture.
  3. Serve immediately in scoops, decorated with a few raspberries.
5. The "Strawb-Mojito" (with alcohol)

Ingredients

  • 10 cl brewed and cooled Gourmand green tea
  • 4 cl White Rum
  • 1/2 lime cut into cubes
  • 1 tbsp brown sugar, a few mint leaves

Preparation

  1. In a glass, muddle the lime, mint and sugar with a muddler.
  2. Add the rum and fill the glass with crushed ice.
