Ingredients :

  • 60 ml of arranged rum
  • 60 ml black tea from Nepal, brewed and cooled
  • 15 ml of honey syrup
  • 15 ml of fresh lemon juice
  • Ice cubes
  • Lemon slices for decoration

Preparation :

  1. In a shaker filled with ice cubes, add the rum, Nepalese black tea, honey syrup and fresh lemon juice.

Ingredients for the dough:

  • 200g flour
  • 100 g cold butter, cut into small pieces
  • 1 pinch of salt
  • Cold water

Ingredients for the filling:

  • 200 ml fresh cream
  • 3 eggs
  • Zest of a lemon and an orange
  • 50 g of sugar
  • Icing sugar for sprinkling (optional)

Preparation :

  1. Prepare the dough by mixing the flour, butter and salt in a bowl until you obtain a sandy texture. Add a little cold water if necessary to form a dough. Wrap it in plastic wrap and put it in the refrigerator for 30 minutes.
  2. Preheat your oven to 180°C.
  3. Roll out the dough on a lightly floured surface and cut out circles with a cookie cutter. Place the circles of dough in tartlet molds and prick the bottom with a fork.
  4. In a bowl, beat the eggs with the sugar. Add the brewed Nepalese black tea, crème fraîche and citrus zest.
  5. Pour the mixture onto the tart shells.
  6. Bake for about 20-25 minutes, or until the filling is set and lightly browned.
  7. Leave to cool before possibly sprinkling with icing sugar before serving.
