BRAZILIAN BLACK PEPPER IN A REFILLABLE PEPPER MILL - BUYING A LUSH PEPPER WITH EXOTIC FLAVORS

Discover my Brazilian black pepper in a selection pepper mill. It was in 2013 that I discovered Brazil for the first time by visiting Minas Gerais and Rio de Janeiro and in November 2015, I will definitely insult myself there. I will have a son in 2021.

Today, I live between the two countries. In 2019, I will discover the pepper plantations in Tocantins, Espirito Santo, Bahia.

This is where I will want to select peppercorns from France or Brazil.

Be careful, in Brazil there is no Belem pepper, here, it is a name which aims to make people believe that we have a unique pepper when not. Unlike Sao Mathieu Pepper, Ilheus for example which are grown in the city. You should know that a city in Brazil is very, very big.

Here you will discover a classic piper with a unique terroir. The grains are dried in the sun because it has a wrinkled color.

We explain in our online store why you should always buy manual and not mechanical drying.

WHAT DOES BLACK PEPPER TASTE FROM BRAZIL?

Here is the scent of our Brazilian pepper:

  • Woody and lemony scent  :  Brazilian Black Pepper  gives off a woody and lemony scent, enhanced with a hint of licorice and coriander.

  • Persistent heat  : In the mouth, it does not seem spicy immediately, but the sensation of spiciness gradually builds up for a characteristic heat, not intense but persistent.

  • Differences between black and white  :

    • Brazilian Black Pepper  (harvested after the green): Very fragrant and powerful, it offers the flavors described above at full strength.
    • Brazilian White Pepper : Cleaned after maturity, it has a more subtle flavor and is less irritating to the stomach. Its flavors are lighter and more delicate.

HOW TO STORE BRAZILIAN BLACK PEPPER

The conservation of Brazilian black pepper is based on three essential principles:

  • Protection against humidity: Brazilian black pepper should be stored in a dry place, protected from humidity. Humidity can alter the flavor of pepper and encourage the formation of mold, which would compromise its quality. It is recommended to store it in an airtight container to avoid contact with humidity in the air.
  • Keep away from light and heat: Brazilian black pepper should be protected from direct sunlight and excessive heat. Heat can cause breakdown of the essential oils that give pepper its characteristic aroma. It is therefore best to store it in a cool, dark place, such as a cupboard or kitchen drawer.
  • Using an airtight container: To preserve the freshness and flavor of Brazilian black pepper as much as possible, it is recommended to store it in an airtight container, such as a glass jar or food-grade plastic container. Make sure the container seals tightly to avoid exposure to air, which can cause flavor loss over time.

Now that you know how to store Brazilian black pepper, you can take full advantage of its unique flavors in your dishes. Don’t hesitate to subscribe to our blog to discover tasty recipes highlighting this delicious ingredient!
