Penja white pepper is the most famous white pepper in the world after Kampot white pepper. Its berries are picked when fully ripe for an incredible civet flavor, then crushed in a fresh-water bath to remove the pericarp and leave only the heart of the peppercorn. Along with Kampot pepper, this is the only pepper to have a PGI.
