What is bergamot?
Bergamot is a small citrus fruit originating mainly from southern Italy (especially Calabria). It is believed to be a cross between a bitter orange and a lime. Its flesh is too acidic and bitter to be consumed directly, but it is its skin (the zest) that contains a treasure: an essential oil of incredible aromatic power.
Its notes are at once tart, very fruity, floral and sweetly bitter. It is this rich and so particular scent which, once deposited on the black tea leaves, gives Earl Grey its legendary signature, recognizable as soon as the bag is opened.

How to prepare your Earl Grey
- Measure precisely: dose 2 to 3 grams of tea for 250 ml of water.
- Ideal temperature: heat your water to 85-90°C. Boiling water would crush the volatile essential oils of the bergamot.
- Steep: wait 3 to 4 minutes to get the perfect balance between the black tea tannins and the citrus.
- Tasting: filter. Traditionally drunk plain or with a very thin slice of lemon, Earl Grey also goes perfectly with milk tea culture.

Ingredients
- 15 cl boiling water and 15 cl milk (cow, oat or almond)

- 1 tsp honey
Preparation
- Steep the Earl Grey tea in hot water for 5 minutes.
- Meanwhile, heat and froth the milk with the vanilla and honey.
- Pour the hot tea into a large mug, then gently add the vanilla milk froth on top. Perfect for foggy mornings!
2. Mint Earl Grey Iced Tea
Ingredients
- 20g Earl Grey Bergamot Black Tea
- 1 liter cold water
- 1 handful of fresh mint leaves
- Cane sugar syrup (optional) and ice cubes
Preparation
- Place the tea leaves and fresh mint in 1 liter of cold water.
- Let steep in the refrigerator for 4 to 6 hours (cold brew).
- Filter, sweeten slightly if desired, and serve over plenty of ice cubes. Cold brewing exalts the bergamot without any bitterness.
3. "Earl Grey Martini" Cocktail with Gin
Ingredients
- 5 cl Gin
- 3 cl Earl Grey syrup (see next recipe)
- 2 cl fresh lemon juice
- Ice cubes and lemon zest
Preparation
- In a shaker, place the ice cubes, gin, lemon juice and tea syrup.
- Shake vigorously.
- Strain into a martini glass (without the ice cubes) and garnish with the lemon zest. A very elegant and balanced cocktail.
4. Homemade Earl Grey Tea Syrup
Ingredients
- 25 cl water
- 200g cane sugar
- 4 tbsp Earl Grey Black Tea
Preparation
- In a saucepan, bring the water and sugar to a boil until it forms a syrup texture.
- Remove from heat, plunge the tea in, cover and let steep for 15 minutes.
- Filter finely. Keep this syrup in the fridge to sweeten your yogurts, pancakes or create your own cocktails!
5. Earl Grey Tea Sponge Cake
Ingredients
- 200g flour, 150g sugar, 3 eggs
- 100g melted butter, 1 sachet baking powder
- 15 cl milk
- 3 tbsp powdered Earl Grey Black Tea (finely blended)
Preparation
- Blend the tea leaves in a blender to obtain a fine powder.
- Whisk the eggs and sugar, add the milk, the butter, then the flour, baking powder and tea powder.
