What is rooibos

Rooibos, also called Aspalathus linearis, is native to the Cederberg mountains in South Africa. This plant produces a reddish infusion and is prized for its total lack of caffeine (theine), making it a stimulant-free alternative to classic tea. The Rooibos manufacturing process begins with the plucking of the leaves, followed by oxidation (often incorrectly called fermentation) and sun-drying — this sequence gives the beverage its characteristic aroma and amber-red color.

Red rooibos or green rooibos

There is a less common variety, green Rooibos, which retains its natural hue and is not subjected to oxidation. Generally, Rooibos leaves undergo an oxidation that gives the beverage its characteristic red hue and develops its honeyed taste. Green Rooibos, unoxidized, is the result of a faster manufacturing process to block oxidation. Its distinct flavor profile, more herbaceous and malty, subtly distinguishes it from its red version, which is much rounder and more gourmand.

How to prepare your rooibos

Preparing rooibos is simple and fast. Being devoid of astringent tannins, it never becomes bitter, even if you forget it in the teapot.

  • Water temperature: heat the water to 95-100°C. Rooibos perfectly tolerates boiling water.
  • Quantity of rooibos: measure about 20g of rooibos for 1 liter of water (one heaping teaspoon per cup). Adjust according to your preference for a milder or stronger flavor.
  • Steeping: pour the rooibos into a fine filter, a sock or a basket inside your teapot. Let steep for at least 5 to 7 minutes. The longer you let it steep, the more the round and red aromas will develop.
  • Tasting: serve hot. Rooibos is also delicious consumed cold or as iced tea.

Preparation: brew the rooibos and let it cool. In a shaker filled with ice cubes, add the infused rum, the cooled rooibos, and the sugar syrup. Shake vigorously for 15 seconds. Strain into a cocktail glass filled with fresh ice cubes. Garnish with an orange zest.

Peach and Mint Iced Rooibos

Ingredients: 2 tablespoons natural rooibos, 500ml boiling water, 2 ripe peaches cut into slices, fresh mint leaves, ice.

Preparation: steep the rooibos for 7 minutes, filter, let cool then refrigerate. Mix with the peach slices and a few mint leaves. Refrigerate for at least an hour. Serve over ice for a summer delight.

Rooibos and Vanilla Ice Cream

Ingredients: 500ml milk, 3 tablespoons natural rooibos, 100g sugar, 1 split and scraped vanilla bean.

Preparation: heat the milk, add the rooibos and the scraped vanilla. Let simmer gently for 10 minutes. Remove from heat, let cool, strain the rooibos and remove the bean. Pour into the freezer for at least 4 hours, stirring every hour, or use an ice cream maker.

Rooibos and Honey Chicken

Ingredients: 4 chicken fillets, 2 tablespoons very strong brewed rooibos, 4 tbsp honey, 2 tbsp soy sauce, 2 minced garlic cloves, salt, and pepper.

Preparation: strongly steep the rooibos in a little water. Mix the infusion with the honey, soy sauce, garlic, salt, and pepper. Marinate the chicken for at least 30 minutes. Bake at 180°C for about 25 to 30 minutes. The roundness of the rooibos will perfectly glaze the chicken.
