Ingredients: 60ml vanilla infused rum (rhum arrangé), 60ml brewed and cooled rooibos tea, 15ml cane sugar syrup, ice cubes, orange zest (optional).

Rooibos and Vanilla Ice Cream
Ingredients: 500ml milk, 3 tablespoons natural rooibos, 100g sugar, 1 split and scraped vanilla bean.
Preparation: heat the milk, add the rooibos and the scraped vanilla. Let simmer gently for 10 minutes. Remove from heat, let cool, strain the rooibos and remove the bean. Pour into the freezer for at least 4 hours, stirring every hour, or use an ice cream maker.
Rooibos and Honey Chicken
Ingredients: 4 chicken fillets, 2 tablespoons very strong brewed rooibos, 4 tbsp honey, 2 tbsp soy sauce, 2 minced garlic cloves, salt, and pepper.
Preparation: strongly steep the rooibos in a little water. Mix the infusion with the honey, soy sauce, garlic, salt, and pepper. Marinate the chicken for at least 30 minutes. Bake at 180°C for about 25 to 30 minutes. The roundness of the rooibos will perfectly glaze the chicken.
Does rooibos contain caffeine (theine)?
No, it is completely free of it — unlike classic tea (green, black, oolong) which comes from Camellia Sinensis. Rooibos comes from a different plant.
What is the difference between red rooibos and green rooibos?
The red one is oxidized in the sun (amber color, red fruit and honey notes); the green one is not oxidized and keeps a more herbaceous profile, closer to green tea.
Can it be drunk in the evening?
Yes, it is even highly recommended. Its total lack of caffeine and its sweetness make it a perfect evening infusion for the whole family.
Where does rooibos come from?
Exclusively from the Cederberg mountains in South Africa — it is the only place in the world where this endemic plant (Aspalathus linearis) grows.
