How to prepare Mint Green Tea

  1. Measure: about 3 grams of tea for each 250 ml cup of water.
  2. Heat the water: to 75-80°C. Avoid boiling to maintain the integrity of the aromas and not burn the green leaf.
  3. Steep: 3 to 4 minutes (up to 5 for a more robust flavor).
  4. Enjoy: strain, and for an even more Moroccan experience, add a few fresh mint leaves to the cup before serving.

The true Atay ritual

Traditionally, mint tea is prepared in a metal teapot (the berrad) with an initial rinsing of the leaves, an extraction of the "soul" of the tea, a decoction on the fire, the addition of fresh mint and sugar, then aeration by pouring from high up to create the foam (ragwa). Find the complete 5-step ritual, as well as the secret of the foam, on our Chun Mee green tea page, the historical base of mint tea.
