Each grain contains a story, that of a generous land and ancestral know-how that is passed down from generation to generation.

  • A Subtle and Captivating Aroma

Sri Lankan black pepper is distinguished by its subtle aroma and fruity notes , which make it one of the most popular varieties in the world. Its delicate, almost intoxicating scent is the result of an ideal equatorial climate, rich soils and abundant rainfall, creating perfect conditions for its cultivation.

  • A Culture Respectful of Traditions

The cultivation methods are incredible, you will discover a Ceylon black pepper with a beautiful wrinkled color. When the pericarp is wrinkled it means it has had traditional drying. Arnaud, the creator of Comptoir de Toamasina, was trained in the state of Espirito Santo and in Madagascar in the cultivation and drying of peppercorns.  The berries are harvested at different stages of ripeness, then dried in the sun until they take on that characteristic black hue and develop their full flavor. Black is the 4th stage of ripening of the berry.

  • Incomparable Culinary Versatility

Ceylon black pepper is a great ally in the kitchen, capable of enhancing meats, vegetables, seafood and even desserts. Its unique and delicate flavor makes it a favorite ingredient for chefs and food enthusiasts around the world.

Learn More About Pepper

Pepper is a spice obtained from the berries of different species of pepper plants, plants of the Piperaceae family. In France, only the fruits of the black pepper tree (Piper nigrum) can legally be called “pepper” without further clarification. These berries, depending on their degree of maturation and their treatment after harvest, produce green, white, red, black or gray pepper. Ceylon black pepper is harvested when the berries are still green, then dried until black and wrinkled, giving them their unique pungent and aromatic taste.

WHY AND HOW TO ROAST CEYLON BLACK PEPPER?

Roasting Ceylon Black Pepper is a crucial step to reveal all the richness of its aromas. Here's why and how to get the most out of this precious spice.

Why roast black pepper?  Roasting helps intensify the flavors of the pepper, by activating the Maillard reaction. This chemical reaction, which occurs during cooking, is responsible for browning and enhancing aromas. It gives the pepper a deeper and more complex flavor, with toasted notes and increased aromatic power.

How to roast Ceylon Black Pepper?

  1. Preparation :

    • Heat a skillet over medium heat.
    • If you plan to grill meat afterward, add a little oil to the pan to infuse the pepper. Otherwise, roast dry.
  2. Roasting :

    • Place 3g of pepper for 4 people in the hot pan. Make sure the grains do not touch each other.
    • Stir regularly to ensure even roasting.
    • When the kernels start to pop, like popcorn, after one to two minutes, remove them from the heat.
  3. Cooling and crushing :

    • Spread the grains on absorbent paper and let them dry.
    • Crush the roasted beans to release their intense aroma.
  4. Use :

    • Sprinkle crushed pepper over your meat before serving for an exquisite taste.

Additional Tips :

  • The temperature of the pan must remain constant to avoid burning the grains.
  • Roasting without oil is best to maintain the purity of pepper flavors.
  • Use the pepper immediately after crushing to take full advantage of its aromas.

HOW TO STORE SRI LANKAN BLACK PEPPER

Ceylon Black Pepper, renowned for its intense flavor and complex aromas, is a culinary treasure that deserves adequate conservation to maintain its quality. Here are some tips for best preserving your Sri Lankan black pepper:

    1. Choose the right container:  Opt for an airtight container, preferably glass or ceramic, to protect the pepper from humidity and light. Plastic containers can alter the taste of pepper over time.

    2. Store it in a cool, dry place:  Heat and humidity are the enemies of pepper, as they can lead to the loss of its aroma and the growth of mold. So avoid storing it near the stove or under the sink.

    3. Avoid direct sunlight:  Light can degrade pepper's essential oils, reducing its flavor. Prefer a cupboard or cupboard away from direct light.

    4. Grind on demand:  To fully enjoy the freshness and aromas of pepper, grind it just before using. Ground pepper quickly loses its taste, while whole grains retain their properties longer.

    5. Don't overstock:  Buy pepper in manageable quantities that you are sure to use within a reasonable time frame. Pepper can be stored for a long time, but it is best to consume it within the year to benefit from its best quality.

    6. Check Regularly:  Inspect your pepper stock from time to time to ensure there are no signs of spoilage or contamination.
