I am Arnaud, creator of Comptoir de Toamasina and co-creator of Abaçai and I am here to reveal to you the culinary secrets of this island treasure. In Brazil, I train pastry chefs and cooks on how to use vanilla and peppers.

Imagine yourself in your kitchen, holding the precious wild pepper from Madagascar in your hands. Each grain, a capsule of pure and intense flavor, ready to transform your dish into a gastronomic symphony.

This pepper, of incomparable quality, reveals its most subtle nuances when crushed with a pestle, thus releasing its unique aromas into the air.

But before using it we advise you to roast it.

For a recipe with red and juicy meats, or white and tender meats. He is perfect.

Personally I will use it a lot on white meats and seafood as well as salads in summer.

But that's not all.

Wild Madagascar pepper also finds its place alongside your vegetables, awakening their bland flavor and bringing them a new taste dimension. In simmered lentils or fried mushrooms, it transforms each bite into an unforgettable sensory experience.

It's more of a pepper for pan-fried vegetables than in a marinade.

And what about its divine marriage with foie gras? At Christmas time, in addition to sauces, it is an exceptional pepper on foie gras.

The conservation of wild Madagascar pepper, like that of many other spices, is based on three essential principles:

  1. Protection against humidity: The voatsiperifery must be stored in a dry place, protected from humidity. Humidity can alter the flavor of the spice and encourage the formation of mold, which would compromise its quality. It is recommended to store it in an airtight container to avoid contact with humidity.

  2. Away from light and heat: This pepper should be protected from direct sunlight and excessive heat. Heat can cause the essential oils that give the spice its characteristic aroma to break down. It is therefore best to store it in a cool, dark place, such as a cupboard or kitchen drawer.

  3. Using an airtight container: To preserve the freshness and flavor of tsiperifery as much as possible, it is recommended to store it in an airtight container, such as a glass jar or food-grade plastic container. Make sure the container seals tightly to avoid exposure to air, which can cause flavor loss over time.

Wild Madagascar pepper or   voatsiperifery  pepper  is a pepper from the  Piper Borbonense family . It is a little cousin  of black pepper , it comes from the same family as  piper nigrum .

Wild voatsiperifery pepper grows   ideally in southern Madagascar. The vine climbs to the top of the large tree.

In the forest you have trees up to 30 meters and we see lianas up to 20 or even 30 meters high.

The wild poop grows in primary, secondary and torpic forests.

The harvest is very dangerous because the workers have to climb to the top of the tree.

Harvesting cannot be mechanized. Nowadays, many producers harvest  wild Madagascar pepper  by pulling the vine from the ground.

This method will jeopardize wild pepper production in the years to come. This practice has a disastrous effect on the ecosystem. For 5 years  wild pepper from Madagascar  has been disappearing.

Le Comptoir de Toamasina  only buys from environmentally friendly producers.

The appearance of  wild voatsiperifery pepper  is strangely similar to cubeb, which is also called  tailed pepper . But in terms of flavor it has nothing to do. Voatsiperifery wild black pepper  from Madagascar  is a mild pepper in terms of spiciness. In fact, it's more a feeling of heat that will invade you than the spicy side. It is a  very rich and intense pepper with a very fresh and woody smell.
