The conservation of wild Madagascar pepper, like that of many other spices, is based on three essential principles:

  1. Protection against humidity: The voatsiperifery must be stored in a dry place, protected from humidity. Humidity can alter the flavor of the spice and encourage the formation of mold, which would compromise its quality. It is recommended to store it in an airtight container to avoid contact with humidity.

  2. Away from light and heat: This pepper should be protected from direct sunlight and excessive heat. Heat can cause the essential oils that give the spice its characteristic aroma to break down. It is therefore best to store it in a cool, dark place, such as a cupboard or kitchen drawer.

EVERYTHING YOU NEED TO KNOW ABOUT VOATSIPERIFERY PEPPER FROM ITS CULTIVATION TO ITS HARVEST

Wild Madagascar pepper or   voatsiperifery  pepper  is a pepper from the  Piper Borbonense family . It is a little cousin  of black pepper , it comes from the same family as  piper nigrum .

Wild voatsiperifery pepper grows   ideally in southern Madagascar. The vine climbs to the top of the large tree.

In the forest you have trees up to 30 meters and we see lianas up to 20 or even 30 meters high.

The wild poop grows in primary, secondary and torpic forests.

The harvest is very dangerous because the workers have to climb to the top of the tree.

Harvesting cannot be mechanized. Nowadays, many producers harvest  wild Madagascar pepper  by pulling the vine from the ground.

This method will jeopardize wild pepper production in the years to come. This practice has a disastrous effect on the ecosystem. For 5 years  wild pepper from Madagascar  has been disappearing.
