Refillable Mill

A practical and sustainable packaging, produced in the European Union, to grind your pepper at the last second.

Kerala Origin

Hailing from the Malabar Coast, the historical cradle of spices in India.

For my family company, Le Comptoir de Toamasina, I wanted to offer a unique Tellicherry pepper — a Piper nigrum that is worlds apart from generic store pepper. This peppercorn is part of my personal selection.

I am Arnaud Sion, founder of Le Comptoir de Toamasina. I am not an importer: I buy this pepper in Europe from a trusted supplier, and I personally select every batch. Tellicherry is one of the very first peppers to arrive in Europe, alongside long pepper — back in the golden age of Portuguese navigators, both were already competing for top position among spices sold on the continent.

It comes from the Malabar Coast in Kerala — a region that remains one of the greatest cradles of spices in India. For less than 6 euros, you leave with a refillable pepper mill and a pepper of impeccable quality, with delicate yet intense heat, boasting a magnificent pericarp and citrus notes unlike any other black pepper in my range.

Arnaud's Note: "The heat of Tellicherry is delicate on the attack, but make no mistake: it remains intense and long-lasting once settled. That's what makes it so versatile — present enough to make a mark, refined enough never to overpower."

The flavor of Tellicherry pepper in a mill

Freshly ground, this Tellicherry reveals a delicate, almost floral heat at first, before giving way to citrus and undergrowth notes with a distinct woody touch. Its well-structured pericarp preserves all of its aromatic freshness. It is a pepper I gladly use in both sweet and savory dishes, thanks to its delicate notes that subtly blend lemon and grapefruit.

Our Packaging Options

For my pepper collection, I chose packaging designed for every need: a practical format for everyday use and economic options for heavy users. All our packaging is produced in the European Union — our bottles, in particular, are manufactured in the Netherlands.

The four Tellicherry packaging options

  • Tellicherry black pepper in a glass bottle
  • Tellicherry black pepper in a refillable grinder
  • Tellicherry black pepper in an eco-pouch
  • Tellicherry black pepper at the best price per kilo

How to use it in sweet and savory dishes

  • Always freshly ground: favor the mill to fully preserve its aroma — that's the whole purpose of this packaging.
  • Balanced dosage: a subtle touch is enough to elevate flavors without overpowering them.
  • Add at the end of cooking: high temperatures alter its most delicate aromas — add just before serving.
  • Creative pairings: experiment with red fruits or chocolate, for example on a chocolate lava cake.

Eight Favorite Recipes

  • Sauteed shrimp: sprinkle generously before searing your shrimp for a spicy kick.
  • Brazilian BBQ style steak: press crushed peppercorns on each side of the steak before grilling for an aromatic crust.
  • Roasted beet salad: a freshly crushed pinch after roasting — toast the pepper beforehand for deeper flavor.
  • Roast chicken: rub the chicken with a mix of crushed pepper, salt, and olive oil before roasting.
  • Sweet potato mash: a generous pinch to complement the natural sweetness of the vegetable.
  • Sauteed tofu: season before cooking for a perfect balance between vegetal and spice notes.
  • Pumpkin soup: a pinch at serving to elevate warm flavors.
  • Veggie rice: mix a teaspoon of crushed pepper into cooked rice and sauteed vegetables.

How to store Tellicherry pepper

  1. Moisture protection: store in a dry place to prevent mold and flavor degradation.
  2. Keep away from light and heat: store in a cool, dark place — cupboard or drawer — to protect essential oils.
  3. Airtight container: use your grinder or an airtight jar to prevent oxidation.

Frequently Asked Questions

Why is pericarp quality important?
The pericarp contains a large portion of aromas and essential oils. A beautiful, well-wrinkled pericarp indicates a harvest at ideal maturity.
Why buy this pepper in a grinder rather than pre-ground powder?
Like all fine peppers, Tellicherry loses much of its complexity when ground in advance. The refillable grinder allows you to grind it at the last second to fully enjoy its flavor.
Is Tellicherry pepper hot?
The attack is delicate and floral, but the heat builds and lingers in the mouth. It is a very balanced pepper.
Can it be used in desserts?
Yes. Its citrus and woody notes pair exceptionally well with chocolate or red berries.
