I am delighted to introduce you to Herbes de Provence , an assortment of aromatics essential to our gastronomy, and particularly the simplest mixture to use every day, from starter to dessert.

This famous Provençal bouquet goes well in all kinds of dishes , including desserts. On my blog you will find amazing recipes such as applesauce with Provence herbs. 

Herbes de Provence can be used in various ways: added at the start of cooking for a tagine , integrated into a marinade , or sprinkled on a dish before serving.  

When I prepare dishes at Apogée Bar , I like to brown the herbs over high heat to bring out the aromas, then I add oil, onions , and finally a nice slice of chicken or fish accompanied by vegetables . It's easy , quick and delicious .           

As you know, Herbes de Provence are a mixture of aromatic herbs widely used in Mediterranean cuisine. This blend includes ingredients such as thyme , rosemary , basil , marjoram , oregano , savory , and sometimes lavender .      

In Provence, it is said that each family has its own blend, created with the herbs they have on hand.

These herbs are carefully selected to create a fragrant blend , ideal for giving character and flavor to dishes.

WHAT ARE HERBS DE PROVENCE

Herbes de Provence , like mild curry, are a versatile blend of aromatics, often used to flavor meats, fish, vegetarian dishes, sauces, soups, and even desserts. 

In France, who doesn't know the famous chicken with herbs from Provence?

Their use varies according to regions and traditional recipes. But be careful, there is legislation on its composition.

Contrary to popular belief, the term “Herbes de Provence” does not designate a particular herb, but rather a blend of aromatics which can include a wide variety of herbs depending on local traditions.

WHAT ARE HERBS OF PROVENCE MADE OF ?

Thus, Herbes de Provence can contain thyme , rosemary , savory, basil, oregano , marjoram , and sometimes lavender , each bringing its characteristic note to the final mixture . On the other hand, the Label Rouge imposes an exact quantity.      

To create a homemade Herbes de Provence mixture, the proportions can vary depending on personal preferences and recipes. Here is my basic recipe that you can adjust to your taste:

  • Dried Provence thyme  : 20%
  • Dried rosemary  : 20%
  • Dried savory  : 20%
  • Dried oregano  : 20%
  • Dried basil  : 10%
  • Crumbled bay leaves with sauce  : 10%
  • Lavender: 2% of the total quantity

Here is the composition to have the Red Label:

  • Rosemary  : 27%
  • Oregano  : 27%
  • Savory  : 27%
  • Thyme  : 19%

These proportions are for a total mixture of 100 grams. You can adapt them depending on the quantity you want to prepare.

    1. Chicken with Provence Herbs: Marinate pieces of chicken with a mixture of Provence herbs, minced garlic, lemon juice and olive oil. Grill them or bake them for an explosion of Provençal flavors.

    2. Provençal ratatouille: Prepare a traditional ratatouille by simmering zucchini, eggplant, peppers, tomatoes and onions with Provence herbs, garlic and olive oil. Serve it hot as a side dish or cold in a salad.

    3. Pizza with Provence herbs: Top a pizza dough with tomato sauce, mozzarella, grilled vegetables and Provence herbs. Bake until the cheese is melted and the crust is golden. A tasty pizza with Mediterranean accents.

    4. Mediterranean salad: Prepare a fresh salad with tomatoes, cucumbers, olives, red onions and feta cheese. Season with a blend of Provence herbs, balsamic vinegar and olive oil for an explosion of summer flavors.

    HERBS OF PROVENCE AND ITS HISTORY

    The history of Provence herbs is a story steeped in tradition and dates back to ancestral practices.

    Originally, this term referred to a selection of wild aromatic plants characteristic of the Provençal region, such as thyme, wild thyme, marjoram, oregano, rosemary, among others. These herbs were traditionally gathered in the wild and were used in local cuisine for their intense flavor and preservative properties.

    Over time, wild harvesting was gradually replaced by more organized production, particularly with the development of the agri-food industry. In the 1960s, the term "Herbes de Provence" was popularized commercially by a French food company, although the mixture itself does not benefit from a specific designation.

    Today, although the name evokes Provence, a significant proportion of the herbs sold under this name come from other regions, including central and eastern Europe, the Maghreb or even China.

    To guarantee authenticity and quality, certain herbs from Provence are labeled Label Rouge, which guarantees precise dosage of the different herbs, drying in accordance with strict standards, and complete traceability from cultivation to sale. These Label Rouge herbs are of Provençal origin and represent the pinnacle of quality in Provence herbs.

    The first written mention of Provençal herbs dates back to 1910, in the work “La Cuisine Provençale” by Jean-Baptiste Reboul. However, it was not until the 1970s that a mixture was marketed under the name “Herbes de Provence” by manufacturers.

    Essential in Mediterranean cuisine, these herbs give many dishes, from grills and stews to sauces and tomato-based dishes, their distinctive aromas and depth of flavor. They embody the culinary richness of Provence and its gastronomic heritage.
