HOW TO CHOOSE THE RIGHT RUM

For rum lovers, choosing rum is a crucial step. Here are some tips to guide you on this taste adventure.

  1. Understanding the Different Categories of Rum:

    • White Rum:  Agricultural rum, also called white rum, is ideal for cocktails and mixed rums. It is distilled from fresh sugar cane juice and retains all the freshness of its tropical terroir. Its lively, herbaceous taste pairs perfectly with fruits and spices.

    • Ambré Rum:  This rum ages between  1 and 5 years  in wooden barrels. It is often used in baking to flavor desserts. Its softer and slightly woody profile brings a subtle complexity to sweet preparations.

    • Old Rum:  Old rum is an invitation to a sensory journey. Aged in wooden barrels, often exclusively in the tropics, it develops a captivating amber color. Each old rum has its own magical notes, ranging from caramel to tobacco to exotic spices. Let your taste buds marvel at this exceptional nectar.

  2. Knowing how to taste:

Take the time to enjoy each sip. Observe the color, breathe in the aromas and let the rum caress your palate. Old rums are tasted slowly, at room temperature, to reveal all their richness.

  3. Explore the Origins:

Each rum producing region has its specificities. From Martinique to Jamaica via the Dominican Republic, discover the terroirs and traditions that give birth to these liquid treasures.

  4. Dare to Mix:

Arranged rum is an opportunity to give free rein to your creativity. Combine different varieties of rum with fruits, spices and aromatic herbs. Let it macerate, taste, adjust, and create your own masterpiece.

HOW TO PREPARE A VANILLA RUM, EXPLAINED BY ARNAUD SION

In the secret workshop of flavors, where aromas dance and mingle, the vanilla elixir is born. Rum, this sailor of the islands, combines with vanilla , this princess of spices, to create a magic potion that captivates souls and warms hearts.

  1. Choose Your Rum  Like a captain choosing his ship, select your rum. White, lively and impetuous, or amber, soft and mysterious. The first is the soul of cocktails, the second, the keeper of secrets.

  2. Select Your Vanilla  At Comptoir de Toamasina, vanilla pods are treasures. Their scent intoxicates the senses, and their fragile bark hides promises. Unleash your creativity, let vanilla guide you.

  3. Maceration  In a glass jar, the pods are revealed. Split in two, they reveal their tender flesh. The rum envelops them, caresses them, and the magic happens. Patiently, month after month, the vanilla infuses, mixes with the rum, infusing it with its secrets.

  4. Sugar, Sweet Companion  The amount of sugar is a personal matter. Some prefer dryness, others sweetness. It's up to you to dose, to find the balance. Sugar, like a faithful friend, accompanies the rum in its metamorphosis.

  5. Patience Rewarded  The elixir rests, protected from light, in a secret corner. The weeks pass, and the vanilla whispers in the ear of rum. She tells him stories of distant islands, of the sun setting on the horizon. And the rum listens, soaks in, becomes divine.

  6. The Tasting  Finally, the long-awaited moment. In a glass cut for the occasion, the rum flavored with vanilla is revealed. It caresses your taste buds, revealing its well-kept secrets. Close your eyes, let yourself be carried away. You are in the heart of the tropics, under a starry sky.

By following these simple steps, you will create an exceptional rum arrangé, an elixir that captures the richness and depth of vanilla aromas. With each sip, an exotic touch, a sensory journey. Health !
