Where Does the 500-550g/l Density Standard Come From?

This threshold is an official standard. In Brazil, the Ministry of Agriculture classifies black pepper into three regulatory types—Brasil Asta, Brasil 1, and Brasil 2—based on strict physicochemical criteria (Portaria under Law 6.305/1975). "Asta" stands for American Spice Trade Association.

For black pepper, Brasil Asta mandates maximum 14% moisture, minimum 6.75% volatile oils, maximum 1% impurities, and only 2% hollow berries ("grains chochos")—versus 5% for Brasil 1 and up to 25% for Brasil 2. This strictness translates directly to 500-550g/l density.

Madagascar pepper grows on Piper nigrum vines, primarily cultivated in the Toamasina (Tamatave) region on the East Coast. Unlike wild Voatsiperifery pepper, this is cultivated black pepper.
