With today's heat, I wanted to share what I've been preparing at home for years to get through the summer with my son. This recipe book is not just a collection copied from elsewhere: every drink was tested in our kitchen, adjusted, and retested before making it onto these pages. It is my work, with my mistakes turned into tips.

Why I am sharing it today

I am Arnaud Sion, founder of Le Comptoir de Toamasina since 2010. I spend my life between Brazil, where I live, and Madagascar, where everything started for me with vanilla. In between, I have also traveled to Papua and India to source spices — which is where most of the ingredients in this book come from.

I wrote this book with my son by my side: he tests the muddler, the shaker, and the sugar levels before I do. The recipes that remain in this book are the ones that survived his verdict — the most honest verdict there is.

Today, with the heatwave, I would rather this book be useful than sit idle on my hard drive. It is free with no hidden conditions: at the end of each card, you will simply find the Comptoir spice or tea used in the recipe — because that is honestly what I developed them with.

Chef's Tip: steep hot for no longer than 15 minutes, otherwise tartness overpowers red berry notes. Paired with Madagascar cinnamon.

Chef's Tip: press mint gently, do not crush — torn mint releases green bitterness that ruins the drink. Paired with Timut pepper.

Espresso Tonic

Frequently Asked Questions

Is the recipe book really free?
Yes, with no hidden catches. It is offered free of charge during the heatwave for direct download. Each recipe card simply mentions the Comptoir de Toamasina product used, as that is genuinely what was used to develop them.
Do I need special equipment to make these recipes?
No. A blender or hand immersion blender, a shaker or sealed jar, a fine sieve or cheesecloth for recipes like horchata, and that's about it. Nothing you won't already find in a home kitchen.
Are the mocktails suitable for children?
