Which pepper to choose for grinder?

Which pepper to choose for the grinder? This is a difficult question to answer.

Each pepper will offer its own notes and intensity. You can think of pepper as a scent!

Because this spice needs to be reduced to powder or crushed, we select pepper mills to delight you.

You can fill your pepper mill with:

  • Black pepper : This is the most consumed type of pepper berry in the world. The peppercorns are harvested by hand just before they ripen, when they are still green. After being boiled and dried in the sun, the berries dehydrate, stiffen and crumble. According to several urban legends, black pepper is a powerful aphrodisiac in addition to having other healing properties. Read the different drying of black pepper , the ideal pepper for everyday cooking and grilling. The oldest pepper in the world is Malabar black pepper.

  • White pepper : it is harvested a little later, and the berries are immediately immersed in water. This makes it easier to remove the skin, called pericarp, to expose the white grain to the sun. The “naked” berries are then dried to produce a white pepper that is much milder than black but with animalic notes. Like white penja pepper. Here, we recommend a recipe with oily fish.

  • Red Pepper : this is the final stage of the pepper harvest. Here, the pepper will have a very beautiful chromatic color. Here, the pepper is harvested by hand then delicately dried. Here, the pericarp is very fragile. It is the most complicated and expensive of the peppercorns. The most famous red pepper that is ideal for baking is Kampot red pepper , we like to combine it with yuzu.

  • Pink Berries : whole pink berries to add flavor to all cuisines. The pink berry, often called pink pepper, is a false pepper plant belonging to the Anacardiaceae family. Pink berries have a pink/red hue and a delicious, somewhat peppery flavor. They will be ideal for garnishing several dishes. A very fragrant taste that will delight your visitors.

  • Allspice : Allspice, commonly known as allspice, is a spice native to the Caribbean and Central America that resembles a huge peppercorn. It is neither a pepper nor a chili pepper; its taste is more of a combination of cinnamon, cloves and nutmeg . It can be used in sweet and savory dishes. Buying allspice .

  • Coriander : coriander is one of those incredibly fragrant aromatic herbs whose lemony and aniseed flavor brings a touch of freshness to the kitchen. She is a true icon of Asian and Oriental cuisine. Buying coriander .

Why is there no green pepper mill?

Green peppers are immature berries picked before the seeds are fully ripe. For up to six months, fresh berries are kept in a humid environment to produce green pepper . It is eaten fresh or dried, and its herbaceous and vegetal flavor is very appreciated. But since the green berry is very crumbly, the texture is similar to vanilla, meaning it can't pass through a grinder unless it's freeze-dried.

The history of ground pepper

The Peugeot brand has marked time and minds for centuries with its rich history.

Looking as far into the future as possible, Peugeot continues to accelerate its development to better serve cooks and families. And it’s true that the pepper mill is an extraordinary mill.

  • In 1810, during the reign of Napoleon, Peugeot was founded in Montbéliard, France.

Peugeot will have a link with Jacques Maillard-Salins. The Peugeot brothers established their own foundry under the name "Peugeot Frères Ainés", which became renowned for its superior work on steel bars. In 1812, the first saw was presented.

  • Then, in 1840, the Model R coffee grinder was created from wood and sheet metal. It came in 10 sizes and was known as the "ordinary model" until 1870.

This is the first Peugeot coffee grinder to have this cubic design and this "handle" for grinding coffee on the top.

  • In 1850, the Lion logo, the brand's mascot, appeared on saw blades to signify the quality of the merchandise, such as the strength of the teeth, the flexibility of the blades and the cutting speed.
  • In 1855, the first cast iron mills, sometimes called counter or grocery mills, appeared. Large quantities of grains, such as coffee, sugar and oats, were ground using these machines. The Lion brand was registered at the Imperial Conservatory of Arts and Crafts on November 20, 1858.
  • The Z type pepper mill was introduced in 1874. It was the first Peugeot table pepper mill. It continues to be manufactured today. Initially planned in white porcelain, it was then made in silver metal, bakelite and wood. It can sometimes be equipped with a crank.
  • Then, in 1879, the Model Y, which was the brand's second pepper mill, was introduced. Since the mechanism is located in its skull, it can only be used upside down. It was equipped with a delicate crystal body that was often replaced with a wooden body when it broke.
  • Next come the cylindrical variants A, C and X, which include a crystal body, a foot and a capsule.
  • The large bi was introduced in 1882. A style of bicycle having an oversized front wheel and a small rear wheel. The big wheel made it possible to travel a greater distance with each pedal stroke.
  • In 1889, the Beaulieu factory produced 50,000 lawn mowers, 600 tons of rolled steel, 600,000 planing irons, 530,000 saws, 540,000 watch springs, 24,000 kg of corset and bus springs, and 450,000 coffee grinders.
  • In 1890, Armand Peugeot presented the Type 3, the third type of automobile that he developed and sold.
  • In 1894, a pepper mill resembling the Z type and measuring just 5 cm high appeared to be a real gem. It is called a gem because of its small size.
  • In 1904, the first decorative coffee grinder was presented. The wooden mill is decorated with blue painting on a white background or patterned designs in different shades.
  • In 1910, a style called gourd was introduced, with polished walnut and very rounded curves. Ten years later, the first Peugeot wall mill was presented, followed by more than 200 versions of this series.
  • Then, ten years later, the first electric coffee grinder arrived, only to be abandoned in 1932 because the motor took up too much space (it was outside the grinder and driven by a belt).
  • In 1931, bakelite versions were introduced. At this time, brass or other plates were no longer used to identify pepper mills as coffee grinders. This model of bakelite pepper mill, however, presents a lion on an arrow. The Hostellerie and Auberge models, which were created between 1953 and 1956, were very popular and functional due to their slender shapes. They continue to appear in the current collection.

Subsequently, Peugeot developed the Peuginox, the first stainless steel pepper mill.

  • In 1960, the Peugimix was then designed. This food processor makes cooking simple and efficient.
  • And ten years later, the Tahiti model with simple and contemporary wooden lines is presented.
  • In the 1970s, models would feature bright orange and green hues. In the future, it will be offered with a stainless steel head and a hardwood body, under the name "Fiji".
  • The publication of “205, a Sacred Number” was a defining moment for us all.
  • From 1982 to 1998, the best-selling and most popular flagship car was produced and sold 5,278,300 units.

During this period, the first Peugeot nut mill was developed.

  • Then, the NANCY model was created, directly inspired by the PARIS collection but made in a more translucent material.
  • In 1996, Peugeot reached an important milestone by selling more than a million mills worldwide. In addition, she designed the first electric salt and pepper mill, the Laval model, available in black, white and blue.
  • The U'select system was patented in 2004. This technique allows the grain size to be adjusted to achieve a precise match between foods and flavors.
  • The 2008 edition of the Daman allows the removal of the central vertical axis connecting the head and the mechanism. In order to facilitate the filling of the mill, this invention will provide aesthetic advantages as well as impeccable operation and transparency.
  • The Elis Sense were produced in 2011, with LED lighting which combines technology and design, activated by a simple press of the hand.
  • The first Peugeot cheese mill, called Annecy, was released in 2013. This is how the first electric nutmeg mills appeared.
  • We arrive in 2017 with the first sesame and flaxseed mill planned.
  • Then there is the Paris Icon, quite recent, which already pleases customers with its beauty and usefulness.
  • Peugeot has not finished its progression, its transformation, nor its capacity to surprise us!

What is the most fragrant pepper?

What is the most fragrant pepper in the world? This is a question that many people ask themselves when it comes to putting the best pepper in their grinder. And chef Arnaud, creator of Comptoir de Toamasina, will join forces with chefs in Brazil in Belo Horizonte to help you discover the ranking of the two best peppers with the most beautiful aromatic power. The first is a Nigrum piper and the second the borbonense piper.

Discover the two most fragrant peppers:

  • Kampot pepper is almost universally used in the world's finest cuisines. It is the first PGI (Protected Geographical Indication) pepper in the world and the first Cambodian agricultural product to obtain a PGI. It is grown in Kampot province. For me, it is the best pepper in the world, it is excellent everywhere, and we have never eaten pepper before having eaten Kampot pepper. I love it in all its forms. The aroma of Kampot pepper is delicious, with delicately minty notes of pear and apple, and exquisite traces of eucalyptus.
  •  Wild Madagascar Pepper: Voatsiperifery wild pepper is harvested in the hot and humid regions of southeastern Madagascar on vines that can reach twenty meters in height and are often inaccessible. Its taste allows you to appreciate woody, citrus, fruit and flower notes, as well as a milder heat than that of black or white pepper. This spice is not very well known, but it is simple to use; simply grind it finely over your meal before serving.

Why use a pepper mill ?

Using a pepper mill is essential to have large grains and unique aromatic power.

It helps provide freshly ground pepper, which is more aromatic.

The pepper mill is an important culinary tool for chefs and pepper lovers.

It intensifies the flavor of each pepper.

Why use a pepper mill? Using a pepper mill for this function is perfect. It helps provide freshly ground pepper, which is more aromatic. The pepper mill is an important culinary tool for chefs. It intensifies the flavor of each pepper.

When you use a pepper grinder, you can get a nice grind of pepper.

By adjusting the grind size, you can get finely ground pepper to add subtle flavor to your dishes, or coarsely ground pepper for a more intense burst of flavors.

This allows you to adjust the amount of flavor provided by the pepper based on your personal preference and the recipe you are preparing.

By using a pepper grinder, you can also enjoy fresh pepper every day. Pre-ground pepper tends to lose its aroma and flavor quickly, while peppercorns stored in a pepper mill remain fresh and aromatic until ground. This means you can enjoy every meal with pepper that has retained its full aroma and flavor, enhancing the dining experience.

Whether you are a cooking enthusiast or a professional chef, using a pepper mill is a wise choice. It allows you to have a nice grind of pepper, adapt the grind size to your preferences and enjoy fresh pepper every day. Don't hesitate to invest in a quality pepper grinder to add a delicious aroma and intense flavor to your dishes.

What type of pepper to choose for your pepper mill

How to choose the right pepper among the many peppers that we select, we will give you tips so that your pepper mill matches your wine and your dish.

Choose a pepper like you choose a good wine

This is the first suggestion that comes to mind from the creator of Comptoir de Toamasina to help you choose a pepper: the selection is made according to the same criteria as for wine. We are looking for "olfactory tastings", "terroir characteristics", "food and wine/pepper associations" using the same terminology as vine professionals and pepper specialists. Because - it goes without saying - pepper is chosen above all depending on what you want to prepare and consume as well as the sensory notes or tastes you like. like wine

  • First criterion: depending on what you prepare or consume

Let's start by reviewing the four shades of pepper. Each of them has unique tastes that pair with a variety of foods:

  • Green pepper is often associated with tartars, raw meats, raw seafood, terrines, pâtés and white sauces.
  • Black pepper is suggested with red meats, fatty seafood, winter vegetables, red fruits and chocolates.
  • White pepper is recommended with white fish, shellfish, white meats, raw vegetables and “yellow” fruits such as pears, apples, quince, mangoes, etc. - White pepper can also be used to season raw vegetables.
  • Red pepper , which, as I like to say, is the last harvest of pepper, will be used between black pepper and white pepper.

Your taste preferences are an essential criterion!

Once you've determined what you're going to taste, you need to consider an equally crucial factor: your taste, what you like, what you want, what gives you the greatest pleasure. To help you, we identify for you two sensory notes which appear on each page of our peppers. Le Comptoir de Toamasina is much more than just a pepper house, but the best shop to buy boxes of ground pepper and ground pepper.

  • Citrus fruits , if you want notes reminiscent of oranges or grapefruits, which we find in vinho verde, rosé wines and even grape varieties like Macabeu and others, we recommend red peppers, black pepper Tanzania , Green Bay of Sichuan , Red Bay of Sichuan and Timut Bay .
  • Vegetal to satisfy your desire for very fresh notes, cut herbs, white flowers, green tea, menthol and eucalyptus. Flavors found in certain Sancerres, Patrimonios and Vermentinos, as well as in certain Provence wines. Here, it’s wild Madagascar pepper , Madagascar black pepper and Kampot peppers.
  • Woody if you like warm and round aromas, such as cinnamon, chocolate or a subtle aroma, and wines with sufficient body (Burgundy, Bandols, but also certain Côtes du Rhône, without forgetting the extremely round and woody aspect of certain Vioners, but also certain natural sweet wines, etc.) Long pepper is a pepper reminiscent of hot notes and Ceylon peppers
  • Animal for people who like musk and leather, like certain Condrieux wines, wines with an oxidizing flavor, Juras wines, but also Languedoc wines. Here, all the white peppers will make your taste buds sparkle.

Like wines, pepper has many aromas. Let's take the case of a white wine from Carco (Domaine Arena in Patrimonio). According to our conception, there would be four major accords, citrus, vegetal, woody and animal.

Examples of seasonal combinations

Finally, for the end of year celebrations, I can't resist the urge to share with you some examples of foods, peppers and wines that go well together. Something to delight your taste buds...

  • Raw oysters - Voatsiperifery with a South African white wine or a dry white wine
  • Pan-fried foie gras - long pepper and Kampot black pepper - Condrieux Smoked salmon - Timut or Voatsiperifery - vinho verde sylex (Quinta de segade)
  • Turkey stuffed with chestnuts - Smoked black pepper - Burgundy (domaine Alexandre Jouveaux)
  • Phu Quoc red wild boar stew - Bandol and white blood sausage with Muntok white pepper
  • Chocolate fondant, long pepper , and natural sweet wine (Maury)

What ground pepper to use for a steak?

  • What pepper to use for a piece of beef? The best pepper for beef is a spicy pepper with good aromatic power such as Madagascar black pepper, Tanzanian black pepper and maniguette.
  • When should you add pepper?  It’s above all a question of preference, but also of recipe! If you want your meat to have the flavor and taste of pepper, you should add it just before serving. If you want pepper without a strong smell, use it at the beginning of the cooking process. Be careful not to burn the pepper in the bottom of an overheated pan, as this will impart a strong flavor to the meat.

The color and power of peppers:

  • Black pepper: Black pepper, which is harvested before maturity and dried in strong sunlight, is the type most often used in cooking. The hottest and most fragrant of all peppers, it is ideal for seasoning all cuts of beef. Choose ground black pepper for its original flavor and aroma. You can then grind it to use as a meat seasoning. It pairs very well with virtually all other peppers and spices. There are as many varieties of black pepper as there are places where it is grown. A succulent steak with peppers
  • Green pepper: Green pepper, used fresh, dried or freeze-dried, comes from the juvenile fruits of the pepper tree. Softer and less odorous than its black cousin, its perfume is released during crushing. As with the classic “Entrecote with green pepper”, we often use whole berries. Green peppercorns are often used to prepare sauces and are added immediately after cooking to impart their flavor to foods.
  • Red Pepper: Red pepper or Pondicherry pepper is the fully mature, unbroken peppercorn (around nine months on the tree). Its flavor is strong, robust and powerful, but its scent is more refined than that of black pepper. It is especially at the back of the tongue that its spiciness is most apparent. Less accessible and more expensive, red pepper gives a rare and powerful flavor to your meats.
  • Long pepper is ideal to accompany a piece of meat. It is one of the first spices to arrive in Europe. Due to its shape, it is often used whole and is ideal for use in marinades. Its flavor is fiery and spicy, less powerful than that of black pepper, with an aftertaste of cinnamon.

Beware of fake friends and fake peppers

Commonly called "pepper", these spices are not:

  • Sichuan pepper, pink pepper, Cayenne pepper, Moine pepper, Jamaican pepper, Selim pepper, Guinea pepper and Tasmanian pepper.

What is the most expensive ground pepper in the world ?

But how to recognize real Kampot pepper? Kampot pepper. The first pepper to obtain the “IGP” label is Kampot pepper. This quality label is a fair reward for the efforts of Kampot farmers. Accompaniment: Red meat, vegetables, grilled meat.

But like any pepper, to recognize good pepper the peppercorns must be clean and uniform in appearance; the color should be uniform, although there may be subtleties. Finally, when you pinch a peppercorn between two fingers, it should not burst but allow a small quantity of essential oil to escape.

It is very easy to recognize Kampot black pepper by eye because it has a deep and intense black color. Practically shiny.

Box of ground pepper

There are several peppers and berries around the world. This article will introduce you to the most popular peppers in the world. They are produced in the four corners of the globe and consumed on five continents. Discover Kampot pepper from Cambodia, wild Voatsiperifery from Madagascar, Sichuan berries from China and the extraordinary Penja pepper from Cameroon. This spice enjoys the lush temperatures of the hottest, most humid regions of the world. We supply the finest vintages of this commodity, which was used as currency in all transactions centuries ago, long before the introduction of contemporary currency.

Since a classification is always subjective, we analyzed the most popular references according to their preferences, their rarity and their cost. Indeed, some wild peppers are quite expensive due to the rigorous harvesting conditions. For example, Tasmanian berries are harvested from their natural environment using traditional methods. Less than 5 tons are harvested each year, making it one of the most expensive peppers in the world. At our bulk spice store you can get both the true peppers of the piper nigrum family and the other berries called false peppers, which are used in the same way.

  • Kampot pepper : This pepper has benefited from a protected geographical designation since 2009. (IGP). It is offered in black, white and red colors. It is ecological, locals consume it and it is not exported. It is grown in Kampot and Kep districts in southern Cambodia. It creates flavors of apple and menthol. The spiciness level is moderate.
  • Penja White Pepper: This rare pepper grows in the volcanic soil of Penja in Cameroon. It is available in black, white and red and benefits from a Protected Geographical Indication. The most common color is white. It is a fruit used by master chefs. It has an extraordinary flavor and length on the tongue. It is very spicy and tastes delicious.
  • Sichuan berries: After extracting the hard and bitter seed, only the pericarp (husk) of this false Chinese pepper is used. This fruit gives citrus notes to many Sichuanese, Tibetan and Japanese foods. It is known to have an anesthetic effect, so dosage should be managed carefully. Here you can buy Sichuan Green Berry or Sichuan Red Berry
  • The pepper native and indigenous to Madagascar: This species is often known as Voatsiperifery because of its small tail which resembles cubeb pepper. Its natural habitat is the island of Madagascar. This black pepper has spicy, woody and citrus notes.

How can we use these extraordinary peppers?  To optimize the aroma and taste of these peppers and berries, it is advisable to buy them in grain form (to increase their shelf life) and crush or grind them directly on the plate. Discover all our unusual peppers in our online spice store.
